Recipe time!

I made this really quick and delicious pasta the other day that I would like to share.

Ingredients;

Garlic cloves (after taste, I used 2)
Red chili
Olives
Tomatoes
Olive oil (a lot)
Lemon juice
Pasta
Rocket salad
Parsley

How;

Pour the olive oil into the pan and add the garlic and red chili.
Add the olives and then the pasta. Cook for a few minutes and then add the rest (tomatoes, olives, lemon juice, rocket salad and parsley). Top it up with some salt and black pepper.

Good morning,

Some plant-based milk I think can be quite expensive and almond milk is one of them. However, I love to have it in my smoothies in the morning so I decided to start making my own. What I do is that I buy almonds in bulk which lowers the cost, I usually buy it from an online store called; Bulkpowders. This recipe takes in total approximately 5 minutes and it is really yummy!

The recipe I use;

1 cup of raw almonds (soak them for 1-2h beforehand to activate them)
3 cups of water

Put the ingredients in the blender and blend for about 2 minutes
Strain the milk through a nut bag and then pour into the bottle.
I save the leftovers (e.g. the rest of the nuts) and use them in smoothies

Good Evening!

This Saturday I turned 24... I had a very cosy day with Ludvig's family, my family and friends. I baked cookies in the morning, all recipes came from Deliciously Ella (love her website and recipes, links below)

I also made a tomato and lentil soup and for the tomato soup I use the following recipe;

10 Tomatoes
1 Red Pepper
1 Small Onion
1 Garlic Clove
Thyme, Oregano, Black Pepper
Lemon Juice
1 Stock Cube

How
Turn on the oven to 225 degrees
Cut the tomatoes, pepper and onion into large chunks and season them with the spices
Roast them for 20-30 minutes
Put the roasted vegetables into a blender along with the garlic, water and the stock cube and blend until smooth
Pour it into a pot, add the lemon juice and heat it up.

This is such an easy and delicious soup that I like to serve with some bread.

Good evening,

Today me and my friend started planning for our thesis project that we will do for this whole semester. We also contacted some interesting companies and hopefully we will get at least one positive response.

Every other week I try to make my own homemade hummus since it is waaaaay cheaper to do, rather than buying the pre-made ones. I make it in my VitaMix blender but it can also be done in a food processor. It takes about 2 minutes and it tastes AMAZING and can be used in meals or as a snack with some bread, carrots or cucumbers.

Here is the recipe that I use;

  • 2 cans (900 g) chickpeas, liquid reserved from 1 can
  • ¼ cup (35 g) sesame seeds
  • 1 Tablespoon olive oil
  • ¼ cup (60 ml) lemon juice
  • 1 garlic clove, peeled
  • 1 teaspoon ground cumin
  • ⅛ teaspoon salt

Put everything except the salt into the blender. Blend until smooth (1 minute in the Vitamix) and add the salt. Then pour some olive oil and sprinkle paprika powder on top and ENJOY!

Hello!

I'm feeling super excited about today since it will be the last one for this semester. On Monday I'll start with the thesis writing which means that I will begin the last semester before graduation. Started the morning with a green smoothie which consisted of the following;

2 small bananas
2 handfuls of kale
2 tsp of hemp seeds
2 tsp of sunflower seeds
1 tbsp of grounded flaxseeds
80 g of mango
300 ml water

Looking forward for a calm and relaxing weekend

Good Evening.

This Sunday has been really nice even though I had to work on a  school project. Started the day with a nice bowl of porridge that I topped up with;

Frozen raspberries & blueberries
Hemp- and sunflower seeds
Grounded flaxseeds
Pumpkin seeds
Peanut butter
Cinnamon

I also tried one of my new teas that I bought on Friday, it's a rooibos tea with mango and peach flavor. It was delicious!

For lunch I had some tortilla pizza - super simple and yummy!

For dinner I cooked a Tikka Masala with some spinach and rice.

Finally, I tried to make a dessert based on Deliciously Ella's recipe - Sweet potato brownies. I don't usually like dessert but this was really good.

Hello!

Today I have been cleaning the refrigerator, done the laundry and worked on a report for Uni. For the afternoon snack I made a delicious smoothie that I wanted to share. Here it is:

Serves 1

250 ml Almond milk (Unsweetened and fortified)
2 Handfulls of blueberries
1 Apple
1 Celery stick
2 Handfulls of spinach
1 tbsp of Hemp seeds

One of my favorite meals for breakfast is the quick and easy bowl of porridge oats. This meal contains loads of nutrients, will keep you full for a long time and is perfect for a cold winter day.

This is the recipe that I normally use:

0.5 cup of oats
1.5 cups of soya milk (or half water, half soya milk)
1 tbsp of cinnamon (love this so I usually put loads in)
1 tbsp of grounded flaxseeds

Stir on medium heat until it has the texture that you prefer

I like to serve it with some frozen berries, preferably raspberries and blueberries. Top that with either a tbsp of peanut- or almond butter!

Good Afternoon.

This will be my first post on this blog and we just entered a new year, 2018. Feels good to get a fresh start and begin the journey of reaching new goals. I will later post my goals for the year in the next post but for now I will mentioned the top 3 things that happen during 2017 and that I am very grateful for.

1. Going vegan
This was by far the best choice I have ever made and I couldn't be happier that my dear boyfriend wanted to join me on this journey. I feel much better today than before.I feel excited about all the healthy food I have discovered through this lifestyle change, my heart feels lighter since there are no animals begin hurt because of me and I'm helping the environment in many ways.

2. My new job
I had the opportunity to do an internship during the spring semester which led to the opportunity of continuing working with this company part-time alongside my studies. It is a start-up with the most amazing people that inspires me every single day. I have probably learn more from them during this short period than I have during the years at Uni. This job will continue on during 2018 as well and I couldn't be happier and more grateful about that.

3. Myself
I am truly grateful (and a tiny bit surprised) that I am writing this today. I feel more comfortable with myself after this year. I have a stronger belief that I am able to do things by myself and are more comfortable in my own body and mind. I managed to get through Uni without a re-exam, which is a proof of me being able to do more than I think and trust my own ability more. Being more secure in my own body I believe has to do with my change in food choices since it has made me a better person in many ways. I am also getting better at not allowing myself to go into the negative thoughts when they appear, however, this is a never ending process...
