      APPLE CINNAMON OATMEAL PANCAKES

      When the month changed from August to September my fall mode immediately switched on. Now finally it is October, THE month of lovely colours, big sweaters and candles. Even though I love everything about autumn, for me one of the most important things is cinnamon. Yes cinnamon. I love cinnamon, and call me crazy all you want but I could spice anything with cinnamon. So right now besides drinking several cups of cinnamon tea I am kinda addicted to these cinnamon apple pancakes. I thought I could share the recipe because I want to believe there are other cinnamon lover out there. So here you go.

      Ingredients 

      • 2 small apples
      • 1dl all-purpose flour
      • 1 teaspoon baking powder
      • 1½dl oat milk (or any milk you desire)
      • 1 egg
      • 1-2dl gluten free oats (all-purpose and whole wheat oats work too)
      • Some cinnamon

      Method

      Start with chopping the apples. The smaller chops, the better. Then combine flour, oats, cinnamon and baking powder in a large bowl. Add egg and milk. Stir well but do not over mix. Add chopped apples and mix gently. When the batter is well combined, warm up the pan and pour small amount of the batter there. Use vegetable oil for cooking. Cook with a medium heat until the pancakes are lightly brown from both sides.

      You can serve the pancakes with bananas and maple syrup like I did. Berries and yoghurt or anything you desire will work just fine too.

      Note: If you are not a fan of apple you can switch it to blueberries or bananas. They all taste as delicious. Believe me I have tried.

      Okay so here is my current go-to breakfast/brunch recipe. I really was the happiest when I made these pancakes and enjoyed them while watching good old Disney movies. Few hours later the reality kicked in and I had to turn my studying mode back on, but oh well. Let me know if you give these pancakes a try!

      Peanut butter smoothie bowl

      I am one of those people who simply believe that smoothie tastes better in a bowl. The difference is huge, because first of all, you can't decorate your smoothie if it's in a glass and second you can't eat it with a spoon from glass.

      I always find my inner calling for smoothies during summer, because I crave for something fresh and hydrating. When winter comes I kinda lose my interest because you know, it's cold and freezing so why would I want my breakfast to be freezing too? This smoothie bowl was my saving during summer, because even though it's cold breakfast the peanut butter gives me the comforting vibes I need during winter. This smoothie bowl in general is my current go-to, I can't get enough of it. So without further ado here is the lil recipe.

      Ingredients 

      • 2 frozen bananas
      • Two table spoons of smooth peanut butter
      • Some yoghurt
      • Some oat milk
      • Handful of gluten-free oats

      Toppings

      • Banana, blueberry and cocoa granola, coconut flakes, almonds and yoghurt

      Method

      Combine bananas, yoghurt, oat milk and gluten-free oats in a blender. Puree until the mixture is completely smooth and thick. Add more milk if needed. Then add the peanut butter and blend again. Taste the smoothie before you pour it into a bowl. Decorate as you desire or use the same ingredients as I did.

      Side note: The recipe makes one smoothie bowl, and honestly I usually just throw the ingredients in without measuring them so don't stress about it too much.

      3x the most delicious (and aesthetic) breakfast

      My perfect saturday morning includes sleeping in, cuddling in bed with good series while eating some really good breakfast. Besides needing my breakfast to be super delicious, I am always trying my best to make it look pretty and pleasing for the eye. I enjoy putting time to make the food on my plate look good. Also taking cute pictures of the outcome, has become one of my hobbies literally. Of course, the dish can't just look good, it also has to taste well, damn good. And believe me when I say this, I have tried so many different breakfasts and brunches, searching for those perfect recipes. Recipes that are both, delicious and pretty on the plate.

      With time I have found quite a few of them and I thought it would be fun to share my favourite top three. So let's dive in!

      Matcha pancakes

      I have had such a love and hate relationship with matcha. At fist I didn't like it at all, but with time I have learned that if you use the powder right you can make tasty things out of it. I have moved from matcha latte to matcha pancakes, and seriously these are so good. Especially if you serve them witch syrup, berries and nuts.


      Ingredients

      • 4 dl all-purpose flour
      • 2 tablespoons matcha (green tea) powder
      • 4dl oat milk
      • 4 tablespoons coconut oil (melted)
      • 2 eggs
      • 4 teaspoons baking powder
      • Pinch of salt
      • Coconut oil for cooking

      What to do

      Step one: In a large bowl mix together flour, matcha powder, baking powder and salt. You can also add few teaspoons of sugar if needed. I never do that, but some people like the taste a bit more sweet.

      Step two: Combine wet ingredients (oat milk, coconut oil and eggs) in other bowl. Then mix all ingredients together, whisk properly until you have nice and smooth batter.

      Step three: Pour some batter to the warm pan. Use coconut oil for cooking (vegetable oil works fine too). Cook with a medium heat until the pancakes are lightly brown from both sides.

      Serve with whatever you desire.


      Tropical smoothie bowl

      Smoothie bowls are perfect breakfast when you are looking for something healthy and fresh. And when you serve them in a pretty bowl you get to decorate them however you want, and thats the fun part. Because normal smoothies in a glass would be just too boring right?

      Ingredients

      • Banana
      • 1 dl strawberries
      • 2 dl frozen mangoes
      • 1 dl non-fat yoghurt
      • Some orange juice

      What to do

      Step one: Blend all ingredients in a blender. Taste and add something if needed because sometimes the smoothie is either too soggy, chunky or thick. When it's supposed to be smooth and creamy. Also if you prefer the taste to be more sweet you can add some honey and blend again before serving.

      Step two: Pour into a pretty bowl and decorate with anything you desire. I used passionfruit, banana, yoghurt and


      Glutenfree cinnamon granola

      For the record, this recipe is hands down my favourite of all. Besides the fact that I love everything that includes cinnamon this granola is such a perfect match for the autumn weather we are having right now.

      For this recipe I always go with the flow. I make this granola over and over again and every time I add different amount of ingredients. So just go with your instincts with this one.

      Ingredients

      • Gluten-free oats
      • Coconut flakes
      • Pecans
      • Honey
      • Cinnamon
      • Coconut oil

      What to do

      Step one: preheat the oven to 170°

      Step two: Combine all ingredients in a bowl. Take time to mix them well. Add something if needed.

      Step three: Spread the granola on baking tray and bake for about 20 minutes. Stir after ten minutes. The granola is ready when it's crisp and lightly browned.

      I always eat this with coconut yoghurt and chopped kiwi, and it's so delicious (and looks pretty in the pictures). But you can serve the granola with anything literally; on smoothie bowls, with yoghurt, oatmeal, add to to muffins or make granola bars!
