Time is valuable, and what you spend your time doing has a huge impact on the life you’ll be living.
If you have a desire to stay healthy even when working a full time job, planning is essential.
To make this you’ll have to set aside about 30-40 minutes the night before.
It’s boiled rice (20 minutes approximately).
While the rice is getting ready you’ll have your vegetables in the oven. You can use carrots, broccoli, cauliflower, eggplant - whatever you prefer. Top the vegetables with some olive oil and spices, and in the oven they go, at 220 C for 20-30 minutes. For a simple dressing you can either use lemon juice and tahini, or you can also add some maple syrup to make it more sweet. This is something I usually make if I’m working an evening shift.
If you want to switch out the rice for an even quicker alternative, use rice or glass noodles. They only need 3 minutes to boil.
Banana ice cream:
Slice a couple of ripe bananas into small bites and freeze them the night before you’ll be using them.
In a blender/food processor, mix the frozen banana bites with one (large) teaspoon of peanut butter, add some raw cacao or as I did here, one teaspoon of cardamom and one teaspoon cinnamon. Top it with hemps seeds and/or flaxseeds for a healthy snack.
Option 2: Use a couple of tablespoons of full fat coconut milk instead of peanut butter.
