What do vegans eat?

Veganism is a philosophy and way of living which seeks to exclude - as far as is possible and practicable - all forms of exploitation of, and cruelty to, animals for food, clothing or any other purpose; and by extension, promotes the development and use of animal-free alternatives for the benefit of animals, humans and the environment. In dietary terms it denotes the practice of dispensing with all products derived wholly or partly from animals.

Today I'd like to share with you a few pictures of some quick and easy recipes that embrace vegan living. I won't share the recipes yet, but please let me know if you want them and I can make separate posts with them. The reason for this post is to show you that is is possible to thrive on a vegan diet and get all the nutrients you need from a vegan lifestyle. I also wanted to put this post together to show you that vegans don't have a boring diet and no, we don't eat only lettuce and spinach. We eat and drink exactly the same things that non/vegans do, minus the cruelty. We eat lasagne, ice cream, 'no-chicken' wings, fish & chips, omelettes, scrambled eggs, burgers, etc.

Sometimes, I hear comments about veganism that simply aren't true. Where do you get your protein from is probably the most common, followed by aren't you worried that you'll die from nutrient deficiency, and the list goes on!

But the truth is, we eat just like non-vegans, minus the cruelty. We find replacements and stick to fruits, vegetables, nuts and seeds. Instead of meat sandwiches, we have tofu, hummus, avocado and tomato sandwiches. Instead of beef steaks, we eat broccoli/spinach burgers; instead of beef bolognese, we make mushroom or meat-free bolognese. We make vegan tacos, vegan creamy pasta, we veganise everything! But we eat the same dishes, minus the cruelty.

We eat jambalaya, stroganoff, casserole, burritos, curries, stews, pasta dishes....We get our protein from legumes, black beans, tofu, seitan, tempeh, hemp seeds, chickpeas, nuts, quinoa, broccoli, lentils, tahini, mushrooms, flaxseeds...what do vegans eat? We eat all of the plants, herbs and spices, grains, fruits and vegetables. We don't miss butter and eggs and cheese because we use dairy- free butter and we cook with flaxseeds and other egg-substitutes. We can have a ham and cheese toastie, we simply replace dairy with vegan cheese and vegan ham. Why would you want to cause suffering to animals if you have tasty plant-based alternatives?

Ethics, health and the environment are the main reasons why people choose to go vegan. Mainly, vegans choose to live this way to reduce suffering. If I asked you if you wanted to cause pain and suffering to animals what would your answer be? If you're still eating them but the answer to that question is 'no', then there's a disconnect between your values and your actions.
