In the mood for cooking: vegan food edition!

At the start of lockdown, I wasn't in the mood for anything. Cooking was the last thing on my mind, and more times than I can count I have resorted to 'freezer-surprise' kind of meals because I just couldn't be bothered to cook up a storm. Sure, maybe the fact that everyone was emotionally struggling with the Coronavirus and fear of what it meant for the world didn't help the case, not to mention having to work from home. Having to work near the space I usually cook in was enough to make me dread making healthy meals from scratch.

But I feel like I've finally turned that corner. I am starting to enjoy the process of preparing meals and cooking up a storm again...(perhaps finally getting a dishwasher for the house helped to relieve some of the pressure; but regardless, I feel like I am finally back!)

Yesterday, since I had swapped my usual toasts for breakfast for some berries and yogurt, I decided to make a pretty yummy sandwich/burger for lunch. The concept was simple: I needed something quick, not too messy, easy to clean up afterwards. The result? A burger sandwich! I used TheVurgerCo® smoky 'bacon' vegan mayo and the new Mexicana® vegan super-melting & spicy real bell-pepper & jalapeno peppers cheese. I topped it all with fresh cherry tomatoes and some spring onions on top.

I had never tried the brand Strong Roots® before. When I went to do my weekly shop, I found these in the frozen section and I was instantly drawn-in by the ingredients and the nutrients of these bad boys. They had a big range of options available, but these pumpkin & spinach burgers sounded right up my street! And I was right! I cannot believe how flavourful these burgers are. And do you want to know the best part? They are super low in sugar, low in saturated fat, a great source of fibre and I swear the puffed quinoa coating binds the whole burger together like glue!

I am definitely going back to get more products from this brand, as I was super impressed with the quality of these burger patties, and especially their ingredients. I made them in my air fryer and they came out super crunchy and full of flavour.

Today, once again, for some reason, I was in the mood for cooking up something yummy for lunch. So I decided to make air-fried rice paper spring rolls. I filled them with an abundance of veggies: fresh tomatoes, red sweet peppers, carrots, mushrooms and Vivera® kebab mince. I seasoned everything with the juice of 1/2 lemon and served them with dark soy sauce with sesame seeds and a sprinkle of spring onions.

I wasn't sure if rice paper would work in an air fryer but I'm glad I gave this a go because they turned out delicious! In fact, I attempted to actually fry one of them in oil and I hated how greasy and horrible they tasted. I can definitely vouch for the air fryer instead! Such a healthier alternative, and they tasted so much better!

If you don't already own an air fryer, I promise you it is life-changing and so much healthier that using oil. I pretty much stopped cooking with oil altogether. Apart from the very, very occasional fried chips, I do not use frying oil at all in my cooking. I normally opt for coconut oil or olive oil to season my meals.

I feel pretty inspired this week, and I hope I can continue to feel this way in the weeks to come,. Not just inspired in the kitchen but also in my creativity and content creation. I missed it! I can't wait to keep sharing more recipes, ideas and parts of my life with you, and I feel like I found my love for photography once again.
