Caulioats - say whaaat?

Hello again!

This time I thought I’d share quite the “strange” recipe with you! I haven’t experimented with it so much yet since I just recently discovered it 👀

“Caulioats”, meaning “cauliflower-oats”. Sounds disgusting you might say but it’s actually not! It’s an awesome way to get some more greens into your diet and also I actually think these “oats” are a lot more filling/creamy🌝
You can also change up the recipe a bit if you want to make it either sweet or savory! So for me it’s perfect since my body unfortunately can’t handle rice so well (I love it but my stomach cramps whenever I have “too much” of it😔). You don’t have to cook these oats in milk like I did, you can use water or something like veggie stock as well but the milk makes it creamier 😊

Ingredients: (one serving)
•100g uncooked fresh cauliflower (frozen works but it has to be defrosted, OR you can use cauliflower rice that you can find in some stores)
•150ml milk
•50ml oats
•2 egg whites
•1 tsp stevia
•salt
•1/2 tsp cinnamon (optional)

How to:
1. Add the cauliflower to a food processor and blend until they turn into a rice texture (If they are frozen be careful to not mix for too long!).

2. Add the oats, milk and cauliflower to a saucepan. Bring to a simmer and let cook at a constant simmer for around 5 minutes.

3. Next add the egg whites slowly, stirring together quickly so you don’t get lumps.

4. Let the mixture cook for around 5 more minutes or so, or until it thickens, stirring occasionally. At first it might look like it won’t come together and thicken but I promise you it will! There will be a point where they suddenly come together and they thicken really fast so keep an eye on it.

5. After they have thickened to the consistency you like, taste test the oats and see if you need more salt/spice/stevia. When you’re happy with how they taste, transfer the oats to a bowl and add your favorite toppings.

A change of direction + some pumpkin pancakes

Hi there!

Long time no see to the people who used to follow me here! I’ve decided to go back to using this blog again occasionally whenever I want to publish a recipe (or maybe even amigurumi patterns who knows 👀). And since I’ve received surprisingly quite a few messages from people asking about recipes for things I thought “why not start publishing them on a blog or something then? I mean it’s good for me as well because then I have a place to store all my recipes so I can go back to them”😂

Also I’ve decided to write in English from now on instead since most of the people who follow me all understand English and it’s easier to reach a larger audience tbh!

A lot of things have happened ever since I posted something here but that makes sense, because I mean it’s been 2 years or something now I think? But I don’t know if I should go into detail on all that’s happened but for now I’ll just keep that to another time 🌝

So to start things off I’d like to share a recipe with you that I recently came up with! I have experimented with oat pancakes for a couple of years now, trying to find a good recipe. But this recipe... oh my I love it! They turn out so fluffy and do I dare say perfect?

Ingredients

Dry:
100ml oats (mixed into flour, see below)
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp cardamom
1 tsp maca powder (can be skipped)
1/2 tsp vanilla sugar (or essence, but I’m not sure of the quantity if so)
1 tsp stevia OR 2 tsp sugar (brown or white)

Wet:
100g pumpkin (cooked, or use canned purée)
50 ml milk of choice
2 small egg whites (or one whole large egg)

How to:

1) Mix the oats into a flour in a food processor (I prefer mixing it only a little bit because I like the texture more). Add into a mixing bowl with the rest of your dry ingredients. Stir and set aside.

2) Mix the milk and the pumpkin in a food processor together to make a purée. Add the egg whites and pulse a couple of times.

3) Add the wet ingredients to the dry, adding 1/3 at a time. Mix with a spoon until fully combined.

4) Most important step! Now you need to let the batter sit for 10 minutes BEFORE you start heating the pan. This will thicken the batter since the oats will soak up some of the liquid. (Above image is before, second image is after 10 minutes)

5) After you have let the batter rest, heat a non stick pan with some oil/butter/margarine. Fry the pancakes on medium heat on both sides until slightly brown. (I use around slightly more than a tbsp of batter per pancake but you could make them larger!)

6) Place all your pancakes on a plate/bowl, serve with some vanilla yogurt/fruit/nut butter or whatever you fancy! I chose to mix some yogurt with blueberries and vanilla stevia drops + some coconut sprinkled on top.
