Easy Pikelets (Mini Pancakes) Recipe


The other day I made these pikelets for breakfast cause I was carving something sweet. I put the finished picture on my instagram story and people voted for me to share the recipe. So here it is! They are simple, delicious and warm the soul. Have fun making them!



Easy Pikelets Recipe


Ingredients

* 3/4 cups milk

* 1 egg

* 1 cup flour

* 2 teaspoons baking powder

* pinch salt

* 4 packs vanilla sugar (you can also use 3 tablespoons of caster sugar)

* coconut oil or butter for frying


* toppings: toasted walnuts / maple syrup / banana slices / fresh berries ...



1. Whisk together milk and egg.

2. Add flour, baking powder, salt and sugar and mix till there are no more clumps.

3. Heat pan and place a teaspoon of coconut oil or butter in it.

4. Place 1 -2 tablespoons of batter onto pan per pikelet. Flip once bubbles are visible.

5. Top finished pikelets with topping of your choice and enjoy!

Fall Inspired Healthy Breakfast Oats Recipe


Hey Beautiful! Hope you are enjoying this sunny Sunday morning. Since fall has begun and its gotten a little colder I more in the food for hot breakfasts.This morning I made a delicious bowl of porridge with my favourite home made recipe. I though it'd be nice to share it with you guys. Especially since it's super easy and quick to make. All you really need are these simple ingredients and a microwave. Scroll down for the recipe and have fun cooking! Also if you happen to not have a microwave at home, you can follow all these steps over the stove in a pot instead.



For the ingredients you will need: instant oats, desiccated coconut, dates, water, milk and vanilla essence.



1. chop up dates into very small bits

2. in a microwave safe bowl mix together oats, coconut, chopped dates and water

3. place in microwave and cook for 2 mins at 900W


4. take bowl out of microwave and stir

5. add milk and vanilla essence and mix well

6. place back in microwave and cook for another 2 mins at 900W



7. take bowl out of microwave and scoop porridge into bowls

8. top with a dash of milk and your favourite toppings

9. eat straight away whilst still hot!

* 1/4 cup desiccated coconut

* 5 dates

* 1 1/4 cup water

* 1/2 cup milk (i used soy, but you can also use oat, almond or normal milk)

* 1 tsp vanilla essence


* toppings: almond slices / raspberries / banana slices / coconut flakes ...



* chop up dates into very small bits

* in a microwave safe bowl mix together oats, coconut, chopped dates and water

* place in microwave and cook for 2 mins at 900W

* take bowl out of microwave and stir

* add milk and vanilla essence and mix well

* place back in microwave and cook for another 2 mins at 900W

Simple & Delicious Banana Cake Recipe


Hey there! Yesterday I baked two banana cakes - one with almond slices as the picture above and one with white chocolate chunks on top. The second one I made for my friend cuz it was her birthday. She loved it and so did others! So here is the recipe for this very simple but delicious banana cake! Plus its super customisable depending on what toppings you like :)


Banana Cake Recipe

* 1 egg

* 1/2 cup oil

* 1 pack vanilla sugar

* 3 tsp baking powder

* 1 cup sugar

* 2 cups flour

* 1/4 tsp salt

* 2 tbsp milk

* 3 banana, mashed very well

* toppings optional: almond slices / walnuts / white chocolate chunks / coconut flakes / raspberries...


* mix together all ingredients except for bananas in large bowl

* mix in the mashed bananas

* pour mixture into cake tin and top with walnuts/ almonds / white chocolate chunks

* bake for 25-35 mins at 180C
