THYME AND GARLIC CHICKEN WITH HASSELBACK POTATOES

COMFORTING SUNDAY DINNER WITH GARLIC, LEMON AND THYME CHICKEN SERVED WITH CRISPY HASSELBACK POTATOES, VEGETABLES AND A CREAMY SAUCE...

SERVES 4

YOU NEED THIS:

4 CHICKEN FILLETS (preferably with skin still on)
POTATOES
FRESH THYME
1 CLOVE OF GARLIC
1 LEMON
1/2 CUP OF CREAM
2 CHICKEN STOCK CUBES
1 BROWN ONION OR ABOUT 10 PICKLE ONIONS
ABOUT 5 CARROTS
BUTTER
OIL
SALT & PEPPER
BREADCRUMBS

DO THIS:

1. Put the oven on 225 degrees.
2. Peel the potatoes, cut them in half if they are large. Try to have them all the same size so they have the same cooking time.
3. Slice the potatoes but make sure you don't cut it through all the way down. Put the potatoes on an oiled baking pan. Melt some butter and brush the potatoes with the butter. Add some salt and put in the oven until they turned golden brown (about 20 min) TAke out and add some more butter and breadcrumbs. Bake for another 5 min.
4. Sauce: cut some pickling onions and the carrots and fry in a small pot in some butter. Almost fill the pot up with water and add the chicken stock cubes. Let it come to a boil. Let it simmer. The longer the better. It should be reduced till half. 
Take the onions and carrots out using a strainer. Add some butter and then some flour to the pot. (About 2 teaspoons) Whisk and then add the sauce back to the pot. Add the cream and a splash of SOYA sauce if you'd like.
5. Clean the CHICKEN and put it in a bowl with some oil, grated garlic, THYME and lemon 🍋 juice. Season with salt and lemon pepper.
6. Heat up a pan and add some butter. Put the fillets in the pan with the skin side down first. Fry until the fillets received color on both sides. Remove and put in a baking form.
7. Add a little water to the pan. Just enough to cover it. Let it simmer and add it to the sauce (would recommend to use a strainer)
8. Bake the chicken finished in the oven until cooked through. Time depends on the size of the chicken. (Estimated time ABOUT 10 min)
9. Cut the onion and vegetables of your choice and fry in some butter and or oil until crisp.
