RED PRAWN CURRY WITH NOODLES

This is just so fresh and delicious. A perfect week day dinner as it’s also quick and easy to make. Can be served with noodles or basmati rice!
YOU NEED THIS:
Prawns
Leek
Pepper
Red onion
Sugar snaps or mange-tout peas
1-2 tablespoons of red curry paste
Oil
2 cloves of garlic
Lemon or lime
Ginger
1 can of coconut milk
Noodles
Coriander (optional)

DO THIS:


Start with cleaning the prawns and then adding some salt to them.
Cut the onions and vegetables
Heat up a pan with some oil. Add the prawns and fry until they have received color on both sides. Season with salt. Finish off with some grated garlic and a squeeze of lime.
Remove from the pan and set aside.
Fry the onions in the same pan and lastly the vegetables. It should be quick as we want the vegetables to remain crispy. Set the vegetables aside.
Add some oil to the pan. Add the curry paste. I would say one tablespoon if you like it mild and two if you want it hot.
Add grated garlic and ginger. Fry for a little while then add the coconut milk. Let it simmer. Season with salt and some lime juice.
Add some cream and/or milk if you need more sauce or if you feel it’s too hot and need to make it a bit milder.
Boil the noodles until al dente.
When the noodles are done put the prawns and the vegetables back into the pan and let it simmer for a minute or two.
Sprinkle some finely sliced leek on top and serve.
Can also be garnished with some fresh coriander!
