I LOVE KEY LIME PIE. ABSOLUTELY ONE OF MY FAVORITES. THIS IS A QUICK AND EASY NO BAKE VERSION. IF YOU LIKE KEY LIME PIE YOU WILL LOVE THIS ONE!Enough for two large ones or 4 small 😊
150 grams digestive biscuits
50-75 grams butter
200 grams condensed milk
2 egg yolks
1/2 dL/25 ml freshly pressed lime juice
1/2 teaspoon vanilla sugar (works without as well)
2 dL/200 ml whipped cream
1. Crumb the biscuits using a mixer. Melt the butter in a pot. I would melt a bit more butter and use as much as you prefer. I enjoy a little extra.
2. Mix together the egg yolks, the condensed milk, lime juice and vanilla sugar.
3. Cut the strawberries in slices
4. Whisk the cream until soft and fluffy. Make sure it is still light, we don’t want it too stiff and heavy.
In a glass or ramekin, add some crumble at the bottom, then the lime mix, then some strawberries and continue in that order. Finish off with some crumble on the top. Garnish with lime or more strawberries if you’d like.
Can be eaten straight away but I prefer it to set a little in the fridge for about an hour or so.
