This pasta is delicious with flavors from white wine, parsley and garlic. Also super easy and quick to make.
You need this:
Large prawns (3-400 grams)
1 clove of Garlic
1 small yellow onion
2 dl white wine
Fresh baby spinach (optional)
1/2 red chili (optional)
Spaghetti ( whole grain or normal)
Salt and pepper
Clean and peel the prawns.
Heat up a large pot with water for the pasta. Add plenty of salt. Cook the pasta a minute less than ordinated on the package as the pasta will continue to cook in the sauce. Save some of the pasta water for the sauce before rinsing.
Chop the onion finely and chili finely. Cut the tomatoes in half and chop the parsley.
Heat up a pan and add some olive oil.
Fry the prawns quickly on a high heat. Add some lemon zest, salt and a squeeze of lemon. Remove from the pan. If you using raw prawns they will need to be fried a bit longer until they have gotten nice and pink.
Lower the heat and add some more olive oil to the pan. Add the onion and fry until shiny. Crush the garlic and add to the pan. Add the chili if you’d like a bit of a kick. I think it taste just as good with or without it. Add the white wine and increase the heat. Let it come to a boil and let it boil and reduce for a couple of minutes. Add some cocktail tomatoes and let it boil with for a while. Lastly add some spinach (optional) and parsley. Add about a glas of the pasta water and let it boil. Add the spaghetti to the pasta. Season with salt and pepper.
Lastly add the prawns and garnish with more parsley. Lovely with some grated Parmesan as well! :)
