Homemade relish

Hello everyone! I hope you all are having a wonderful day💛 Two days ago I made my first homemade relish of the cucumbers that I have grown this season. 1kg of homegrown cucumbers, that felt amazing I need to say! They were really yummy and had a great crunch to them, I hope I have more seeds otherwise I need to same some from the next harvest because I do not remember what it was called. Either way, homemade relish or bostongurka as we say here in Sweden was the perfect decision. I had a lot of onions and a few bell peppers that needed to be used.


1kg (2.2lb) cucumber
2-3 onions
2-3 bellpeppers, depending on size
2.5dl (1 cup) of 12% Vinegar
2dl (Just under a cup) sugar
1-2tsp salt
2tbsp of yellow mustard seeds


Begin by finely chopping the onions and bell peppers. Pour it into a big saucepan, cover with water and let bring to a boil. Strain away the water. Chop the cucumbers into small pieces. This takes forever but make sure to keep cutting small pieces, it makes a difference when you eat it later! If you don't have the patience to chop everything, mixing the ingredients in the mixer is fine! Then pour the vinegar, sugar, salt and mustard seeds in the now empty sauce pan. Add the vegetables and let it simmer under cover for 20 minutes. Distirbute the relish in well cleaned jars and put the lid on tightly. Let cool down and place for storage! I read somewhere that you should keep it in the refrigirator but as long as the relish was very hot when you poured it in the jars and if you made sure to put the lids on tightly, a cold and dark space will work just fine.
