Use a food processor to grind the oats and cashews into flour. Then add the dates, salt, cocoa powder, vanilla powder and cinnamon. The mixture might be a bit dry, so add some water until you're happy with the consistency. Then roll the balls the size you want, and finally roll them in the shredded coconut. That's it! So easy. They can be kept in the fridge for 1-2 days, but I suggest you put the ones you're not going to eat the same day in the freezer. That way they stay fresh and you can have some whenever you want!
