VIVA LA MEXICO! We spent our spring break in Mexico (8 days total) and had the best time ever! We have been to Mexico many times before (this was our fifth time) and have always loved vacationing there! Unlike going to a big city, Mexico offers the opportunity for ultimate relaxation, making it the perfect spring break destination.

We stayed at an all-inclusive resort called Grand Bahia Principe. We have stayed here before and absolutely loved it, so we decided to go again. This resort has four "hotels" in it: Coba, Tulum, Akumal, and Sian Ka'an. To be honest, our family was a bit disappointed from first because they turned Akumal into a member-only area since our last trip to Grand Bahia. But we quickly got over it and got settled in.

Grand Bahia Principe is a gorgeous resort with a jungle feel. There is so much nature and color throughout the resort! The resort is super scenic and provides some great photo-ops!

For our birthday on March 20th, we went to the Brazilian restaurant in the resort. We were welcomed to a table COVERED in rose petals! They also had special little cakes for us which were adorable! Thank you Bahia Principe for an amazing birthday!

We are super excited to be leaving for Mexico in two days! This will be our fifth trip there and we absolutely love it! We will be staying in Riviera Maya at the Grand Bahia Principe Resort (we've stayed here once before and it was definitely one of our favorites!). Today we are sharing our beach essentials as well as an exciting announcement!



These essentials are basic but especially items like earphones (for listening to music, audiobooks, podcasts, etc.) and chapstick (important for protecting your lips from the sun. They can burn too!) are commonly forgotten.

ALSO - We have decided to start a YouTube channel! This is something we have considered doing for a long time and it would mean the world to us if you went and subscribed to our new channel! We have received many requests and emails asking us to make a YouTube channel, so we decided to give it a go! We will be making videos about fashion, lifestyle, travel, and daily life (vlogs?). These cookies are amazing! When we made these for Valentine's Day, we instantly fell in love with the soft texture of the cookies. Even though some of the butter gets substituted with cream cheese in this recipe, the cookies actually end up tasting rich and more "buttery" than they would with just the butter. 

We typically try to eat pretty healthy but these cookies in particular are definitely indulging. We actually swapped some of the white flour in this recipe for whole wheat since that's what we had on hand and the whole wheat gave them a really interesting touch. The cookies are probably best with all white flour though. 

RECIPE

(original recipe can be found here)
1/2 cup (1 stick) unsalted butter, softened
1/4 cup cream cheese, softened (use cream cheese in a block or spreadable, don't use fat-free, light or whipped)

3/4 cup light brown sugar, packed

1/4 cup granulated sugar

1 large egg
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
1/4 teaspoon salt, optional and to taste
2 1/4 cups semi-sweet chocolate chips or chunks

DIRECTIONS


  1. To the bowl of a stand mixer fitted with the paddle attachment, combine the butter, cream cheese (measure it by smooshing it into a 1/4-cup measure), sugars, egg, vanilla, and beat on medium-high speed until well-creamed, light and fluffy, about 5 minutes (or use an electric hand mixer and beat for at least 7 minutes).
  2. Stop, scrape down the sides of the bowl, and add the flour, cornstarch, baking soda, optional salt, and mix until just combined, about 1 minute.
  3. Add chocolate chips and chunks, and beat momentarily to incorporate, or fold in by hand.
  4. Using a medium 2-inch cookie scoop, form heaping mounds (I made 28). Place mounds on a large plate, flatten mounds slightly with your palm, cover with plasticwrap, and refrigerate for at least 2 hours, or up to 5 days, before baking. Do not bake with warm dough because cookies will spread and bake thinner and flatter.
  5. Preheat oven to 350F, line a baking sheet with a Silpat Non-Stick Baking Mat or spray with cooking spray and place mounds on baking sheet, spaced at least 2 inches apart (I bake 8 cookies per sheet). Bake for 8 to 9 minutes, or until edges have set and tops are just beginning to set, even if slightly undercooked, pale and glossy in the center. Do not bake longer than 10 minutes as cookies will firm up as they cool (The cookies shown in the photos were baked with dough that had been chilled overnight, allowed to come to room temp for 15 minutes, and were baked for 8 minutes, with trays rotated at the 4-minute mark. They have chewy edges with soft, pillowy centers). Allow cookies to cool on the baking sheet for 5 minutes before removing and transferring to a rack to finish cooling.
  6. Cookies will keep airtight at room temperature for up to 1 week, or in the freezer for up to 3 months. Alternatively, unbaked cookie dough can be stored airtight in the refrigerator for up to 5 days, so consider baking only as many cookies as desired and save the remaining dough to be baked in the future when desired.

Since Valentine's Day is coming up, we put together two wearable looks for the occasion. The first look is casual and a bit more dressed down, with a soft chunky grey sweater, jeans, black booties, and a simple necklace. This outfit is perfect for if you are doing something less fancy for Valentine's Day and you want to stay comfortable. The second look is a bit more retro and perfect for people who lean towards edgier styles! Bomber jackets are very trendy right now, and the black hearts on this one are a perfect way to dress up for the holiday. The chunky sweater underneath is pink (to lighten up the look a bit) paired with dark jeans, a black belt, and black heeled booties with bows on the back. The outfit is different and fun!

We are in love with this Majorelle Floral Dress! It has a ruffled neckline and fluttered sleeves making it a great choice for a night out. This dress could look good with so many different shoes, but simplicity is key since the dress is patterned!

PLAN AHEAD
Having a plan for the week can make life so much less stressful. Schedule your time but also create a flexible schedule in case something pops up during the week. If you are an agenda person, here's a good one for planning purposes.

SAY "YES"
Agree to the things you want to do, even if you don't think you will have time. Obviously you don't want to overload yourself, but don't sell yourself short either. Every day counts.

DO THE THINGS YOU HAVE BEEN PUTTING OFF
A good majority of people resist doing things like cleaning, finishing projects, etc. It may seem like a good idea to put things off at the time, but the stress will catch up with you when you realize you have a million things to do.
