Igår provade jag ett recept som jag sett överallt på instagram lately.. banana nice cream! Gluten-free, lactos-free, fat-free, no refines sugars    --> cruelty free! Detta kan man ju variera, nötter, kaffe, frukt.... Åh vilken dröm😍 

Jag la 3 bananer, skalade och skivade, i frysen i 5 timmar. Sedan mixade jag dom i matberedaren med en grov matsked kakao. Klart! 

PÅ schemat idag är det pluggning, har lite smått ångest över ekonomiprovet imorgon. Men sen har jag ju mitt yogapass vid femtiden, så då har jag nått att längta efter:)

...på svenska! Jag har den senaste tiden skrivit på engelska för att göra bloggen mer öppen för internationella läsare, men eftersom att det ofta blir knappt om tid så får det bli svenska i framöver! Idag har jag bråkat lite med företagsekonomiprovet som jag har på måndag, men jag känner att jag bara trampar vatten. Utbetalning, inkomst, komplementär, solidariskt ansvar ... ja ni hör väl själva. No mercy at VRG 🙇 

However, som plåster på såret gjorde jag my beloved rödbetsjuice. Jag juicade 3 rödbetor, 2 apelsiner, 3 äpplen och en bit ingefära. SÅ enkelt. Älskar att juica olika saker, om ni vet någon god blandning får ni gärna kommentera 👇

I have studied all day, but luckily my green juice came to rescue💗  Today is quite a gloomy day, it's like no weather at all. Just grey. Today is Cinnamon bun-day! It's actually a day we Swedes celebrate, so I had one this morning. Whenever I let myself eat something I shouldn't have, I avoid feeling guilty. I just accept that "okey, now I had something unhealthy, but it's not the end of the world. Deal with it". About once  a week I allow myself to eat what I feel like eating, because by setting strict rules about what I should and should not eat just doesn't work fore me, it never lasts for long. I set up reasonable goals, complete them and then I indulge in something real gooood. But during the day I let myself eat what I want, I don't eat donuts, french fries and coke all day. For example yesterday ( eat-whatever-I-wan't-day ) I had a normal breakfast ( juice, tea, 2 coconut oil fried eggs and mushrooms ) and lunch at school was sallad, beans and potatoes. When I came home, I had a few squares of chocolate, 3/4 bag of crisps and one 50 cl coke light. I'm not perfect about my eating habits, but I eat so much better and have improved a whole lot. One day I will understand that I don't need days when I can eat whatever I feel like, but I'm not there yet. Anyway, this juice was gooood.

Quinoa stuffed bell peppers with tomato sauce. I mean, what more do I have to say? This is dish is among my favourite dishes, simple, filling and super delicious! I  prepared these yesterday after school, and then it was just to heat it up and eat! If you can find beef tomatoes ( which we unfortunately don't quite have here in Sweden ) you can fill them with the quinoa-mix, soo good! 

Quinoa stuffed bell peppers ( 6 servings ):

- 1 cup red quinoa

- 6 bell peppers, seeded 

- 1 small zucchini, chopped

- 1/3 eggplant, chopped

- 2 garlic cloves, peeled and finely chopped

- 1 small onion, peeled and chopped 

- Sea slat and ground black pepper

- Fresh parsley 

- Fresh mint leaves

1. Preheat oven to 225 degrees celcius. 

2. Bring the quinoa to a boil for about 10+ minutes until all the water is absorbed. ( see directions on quinoa pack )

3. Drizzle pepper halves with olive oil and roast in the oven with cut-side down for about 20 minutes until tender. 

4. Heat a few tablespoons of olive oil in a pan and add garlic, onion, eggplant and zuzzhini. Cook until tender for 10 minutes, season with ground black pepper, salt and herbs. Turn heat off and toss boiled quinoa and feta cheese into the mixture. 

5. Fill bell peppers with cut-side up, put lids on. Roast in the oven before serving for about 5-10 minutes.

Serve with tomato sauce and wholegrain rice! 

 

Today I went to school, went to the gym, walked a dog ( I do it once/twice a week to earn some extra cash ) and got home dead. So freaking tired! At least it's friday, even though I'm going to study all day tomorrow... Maybe go to the gym and have a yummy juice :) What are your plans for the weekend?

This green smoothie recipe is probably the most yummy smoothie ever, and for green smoothie beginners this is perfect! I recall having problems in the beginning when I tried to drink green juices, I wasn't used to the consistency and the spinach didn't make it any better. But this one, with its sweetness from the fresh pineapple, it's simply awesome. Or should I say RAWsome? Haha!

Green smoothie:

- 2 cups of fresh spinach

- 1 cup of frozen/fresh mango

- 1-2 banans 

- 1 cup of fresh pineapple

- Flaxseeds/chia seeds ( optional )

Add a little water and mix!

...is my beetroot juice and my super-effect-green-glowing juice!

Since I got my juice-extractor from Philips ( which I got for a generous reduced price ) I've been bringing juices to class every day! Both juices are so colourful and energizing. Health at its peak! The beet juice both improves athletic performance and lowers blood pressure and decreases the risk of obesity, diabetes, heart diseases etc ... The green juice is filled with chlorophyll, vitamins, iron and more! It's just a perfect way to start off the day with the green juice, it covers most of your bodys nutritional needs and is delicious! 

The Beet Juice --->  2 peeled oranges, 1 large beetroot, 2-3 apples ---> juice and serve!


The Green Glowing Juice ---> 2 sticks of kale, half a head of romaine lettuce,1 peeled lemon, 3 apples, 2-3 sticks of celery, 1/2 cucumber, a piece of peeled ginger --> juice and serve!

 

The beet juice only consists of three ingredients, but the green juice is a bit more complicated. If you don't have all the fruits and vegetables, you can juice apples, kale and ginger. Also super delicious!

Hi people! 

First of all, welcome to my new blog! I've had both monday and tuesday off from school, which has been zoo appreciated! Really needed time to sleep since my diurnal rhythm  is totally out of balance  because of the kick-off party last week. I've also been at the book fair in Gothenburg, also amazing but sleep-consuming haha! 

Today I tried a new recipe,namely kale chips! I had some kale laying around in my refrigerator, so I found this recipe, really quick and easy - just what I like!

Kale chips:

1. Preheat oven to 200 degrees ( celsius ) 

2. Take off the ribs of the kale and chop into 1- 1 1/2-inch pieces

3. Put the kale on baking sheet and toss in some olive oil and salt, mix

4. Bake for about 10 minutes until crisp - serve!

Absolutely delicious! Being in the oven really brings out all the flavours and the natural sweetness of the kale. Since all my free time, I also did beet juice and green juice, recipe in next update!
