Australia New Zealand Army Corps

So, it was monday yesterday. And today is the weekend! Wohoo! haha. Aussies love their public holidays hey!
25th of April is a very important day for Australians as it is the anniversary of the first major military action fought by Australian and New Zealand forces during the First World War. Most people set their alarms super early to attend the Dawn Services held all over the country. I have to admit, I would have loved to go but since I havent had a sleep in for 2 weeks almost, so I figured I have to prioritise myself for once. So I slept in and watched the Dawn Service on my laptop. Works as well I guess. I have been longing for a day of sleeping in, breakfast in bed, Streaming the news on my laptop. So that i exactly hat I am doing right now.

As Scandic Café is closed on public holidays, we get that day off, which actually is so nice. It has been pretty full on since february. We've had so many caterings and orders in general, you can feel yourself being almost run down from time to time. We all need a little break I guess. Yesterday was also MENTAL! So busy! Mondays equals MEATBALLS! And it felt like I served meatballs to half of the earths population at one stage. But I do love busy-ness so much! Working with my favourite Dane Louise in the kitchen is such a joy! We are the BEST team. You know when you dont even have to communicate with words, everything is just flowing. Gotta love that! She has definitely become on of my absolut favourite humans.

Plans for today is just to relax, spend time in the sun, and get some work done. Perfect days. Also! My latest vegan obsession is Macro Bowls! I get mine at one of my absolute favourite places to eat, the Plantbased Restaurant Elixiba. Look at this!!!

It has Jackfruit, black rice, broccoli, sweet potato, chipotle, pickles etc etc. It is definitely a bowl full of plant power. I Have gotten a whole lot of questions about my change in "diet" lately. Currently working on a post about that. Stay tuned.
I also went to Elixiba for dinner on saturday and breakfast on sunday haha.

Pictured is a coconut bliss out bowl and THE BEST CHAI LATTE to date! Oh my goodness! Made with homemade cashew milk and topped with cinnamon (my Scandic soul is jumping out of happiness! Cinnamon for life!)

started this rainy saturday morning with the best bowl. Honestly. I have gotten to know an amazing girl at Decisions where I have my saturday breakfast, and she makes insanely good coffee as well. The coffee pictured is a turmeric latte on almond milk. Turmeric is SO GOOD for you! Its for a reason it is called GOLDEN milk. Gold for your body For example it:

  • Aids metabolism and weight management
  • Anti-inflammatory
  • Antibiotic
  • Antiseptic
  • Antioxidant
  • Speeds wound heeling
  • Skin tonic


etc etc etc.

So much good stuff! And it also tastes amaing!

And here we go again! Short week and friday came so fast!! As per usual my life is speeding at an average 180km/h. But I love it.
So I have gotten a few AMAZING offers lately. Ill tell you about some of them a little later. What I CAN tell you tho is that I today got a new job on the coast! I am beyond happy! absolutely amazingly excited! And relived. You know on the 417 visa you are only allowed to stay a certain amount of months at one employe. So annoying. Oh well. Time for new adventures!

I am biking 24km at 4:30 in the morning tmr. Ill update you more after that. if I survive haha.

Public holidays guys!
They mess with my head. Today I am wakening up to the second work day of the week, but its already Wednesday?
soon its weekend all over again. Not complaining!

So whats been up?
Prior to the easter break my body came to the STOP sign. Lately (or maybe always) my personality tends to try to squeeze in AS MUCH AS POSSIBLE in every single day. Which usually isnt a bad thing. Until its too much. I guess thats what happened on the thursday. I woke up to a pounding headache, hurting neck and possibly a fever. My body was just not in the mood. I struggled through work, but got there in the end. Luckily I had 4 days off to look forward to. I spent my easter break eating the most amazing food, spending time with such inspirational people, hanging out on the beach as the weather has been beyond amazing lately! Just that perfect temperatur with highs reaching 25 degrees and the nights touching 15 degrees. My viking soul is smiling all day long now when the humidity isnt 94%. Haha because that is actually horrible. Oh well. Weather isnt anything you worry about living when in paradise.
This morning I got up at 4:30 to go swimming with all the oldies at the pool. Its one of my favourite way to stat my day. Wednesday is the one day I have a little sleep in during the work week. Or, well, it never ends up being a sleep in just because I always do some sort of exercise prior to work. But the best feeling is the one after you have moved your body early in the morning, and then can curl back up in bed with brekkie. Which I am currently doing.

Also went for an interview for a new job yesterday. It felt good, but ill have to wait until friYAY until get an answer. But I have learnt that the moment we stop worrying about problems that arent truly real and start to live in the present moment, all the stars will line up. Its pretty cool and I also know that I am a living proof of that. I have some other exciting news to tell y'all as well. But Thats for later. I cant spoil you to much with all of the excitement my life is giving me at the moment, can I? ;)

Isnt strange?

We worry about so much stuff in life. All the time. Why? Well I get it. Money, health etc etc. It can cause eligible worries ever now and then. but think about it. How do we now tomorrow is even gonna exist? Why not make the most of today instead.

Easier said than done, thats for sure.
I find myself worrying about my future quite often at the moment. Mainly because I have to change employer at the end of next month (visa rules) So I am currently on a job hunt. Some days I feel pretty happy, and I see ONLY opportunites, where I some days just feel stressed. Oh well. I still believe everything will work out just fine.

Today it is already wednesday! Long weekend is coming up! I work tomorrow but I have friday, saturday, sunday and monday off. Bad for the wallet, good for the mind :) I am gonna spend it doing things I love. Working out, eating colourful food and hanging out with friends. And of course; BEACH!

Tonight, me and my friend Louise are attending a dessert event at my favourite restaurant Elixiba. We will indulge in vegan treats all night. I CAN NOT WAIT!

We all woke up to the atrocious news about, yet another act of terror. This time in my hometown. The town closest to my heart. Because thats it. No matter how much I travel, Stockholm will always be my favourite.
I woke up to messages and news articles all over my different feeds. I rung my mum in complete panic as at 4am this morning. Complete shock. I guess it is both fear, and a bit of helplessness. I feel that I am so far away from all the pople I love today, and I now I cant "undo" things, but I still felt the urge to just go home today. However, I wont. But I will be there in heart. Pray for Stockholm. Stay safe.


So after my early start I jumped on the bike and biked 12km to DECISIONS! A bowl full of love is what we all need today.

This is my favourite bowl of all times. Acai with LOTS of granola, fruit and I know many of you always wonder what the cake-looking-thing is. And its a raw food bar. Dessert but a healthy one. Made out of nuts, dates, seeds etc etc. This one is a snickers one. Heaven in a bowl.

Today calls for chillaxing, eating.... and eating. Probably a few more phone calls to people back home to make sure they are all okay.


S T O C K H O L M

Woke up to the atrocious news about yet another act of terror. This time in my, my little home town.
I can't even begin to explain the fear, sadness and sorrow I felt calling my mum with panic rushing through my head at 4am this morning. However I am sure my feelings were no where near the feelings of those ones experiencing it live...

The worries I've had the previous weeks, like my bike being stolen, the uncertainty of my future work situation, the pimple on my left cheek, they now seem immensely small. Someone didn't come home to their families today.

My thoughts are with you Stockholm. Stay safe

How is it possible for it to be friday tomorrow already? Like, honestly, it was Monday an hour ago! No? Oh well. Today was a busy day at work which always is good. However, once I got home I was sooo hungry I ate half of my pantry I believe haha. I know my bosy needs A LOT OF FOOD as I do A LOT OF TRAINING. My plan for the weekend is to blog more about my week, more detailed as I crash every day after work and dont have the energy to write something spectacular haha. I am gonna EAT. At all of my favourite restaurants, Im going to the markets, and I am gonna spend time on the beach. Has to be the perfect weekend!

It has gotten so cold lately. I love it, but on my way from ork I actually had to stop at K-mart to but Long pyjama pants haha. HOw weird is that. From a billion degrees to 16 in 2 days. Sometimes I dont understand Australia.

Oh well. Time to sleeeeeep. Big day at work tomorrow! Tooodels!

Oh my, Im so ready for bed. I was up super early today for a morning swim before work. Holy moly, it was FREEZING! Haha (aka Aussie-freezing 18 degrees and rain).

After work I decided to not go to the gym and I went to one of my favourite cafes instead. I brought my laptop and applied for several jobs, as well as indulging in this little snack. I will tell you more about my last few very adventurous days, but that has to be tomorrow. I am so ready for bed.

2017, Australia, EAT-able

So mondays are always a busy day for me.
At work we have Meatball Monday which usually is pretty popular and we get lots of customers devouring our delicious traditional Swedish dish. That as well as making everything new. We are closed during weekends (Wohoooo) so we often have to make new Skagen, new cakes, new salads etc etc. Busy day indeed. Mondays are also my RPM aka spinning day at the gym. The instructor "M" is my role model. She is just so cool and just such a power woman. Always leaving those classes feeling, happy, strong, tired, satisfied... and like I wanna vomit. Haha. Yesterdays class was probably the hardest one so far! RPM consist of 7 tracks (45 minutes) and yesterdays "Track 7" was INSANE! Oh well. I survived this weeks Monday again!
But here is tuesday! Which means work, of course, leg-day and YOGA! Love my late night yoga sessions. I am also having an intervju/chat with a job that I have applied for so please think of me this arvo! I will need it haha.

Talking about days. How amazing was my lunch on SUNday! Pink Pitaya bowl with granola, fresh berries and a raw peanut butter bar! This one is from one of my current favourite places in Mooloolaba. CK Wholefoods bar. Definitely worth a try. or 3. But eating my oatmeal in the morning, watching the sun rise from the ocean from the 10th floor, is pretty amazeballs as well I would say. Every Sunday I walk through Wollies, and there is always this same lady who has come to serve me for the last few weeks. She is so lovely and we always have a little chat. It has even come to that point where we say "Good Bye, see you next week". Yesterday, Saturday, I had to do some shopping in the evening, and there she was again. She went from here little zombie-mode to the brightest of smiley-faces when we made eye contact. We spoke a little, cracked a joke before saying good bye. Both with these inevitable smiles. It made me think. How easy it is to spread some joy in this world. And the fact that it always takes my half an eternity to get home from the shops and that I miss the bus every second day because of this, nah it actually doesn't bother me at all.

And maybe it is true what my friend said the other day; Sophia, you manage to touch everyone's heart, in one way or another. It made me smile, because after years of self hatred, isolation, destructive and dangerous thoughts, I am finally becoming the person I always wanted to be. Our time on this planet is so damn short. We better make the most of it. Start with yourself, and the rest will follow.
