Just when I thought my day couldn't get any better I stumbled over a lovely restaurant in the city centre of Stockholm - Stories Kulturhuset. All these tasty fresh ingredients gave me more than enough energy for the whole day.

A nutritious salad is a staple in my diet and I usually make it myself in 10-15 minutes but today's lunch was something special - colourful and so rich in flavours yet very simple, one of my favourite combinations!

Here are the ingredients in case you'd like to treat yourself or some lucky soul for lunch one day! ;)

Goats Cheese & Avocado Salad

Beets

Radish 

Avocado

Tomatoes

Cucumber

Carrots (the lovely hello ones)

Red onion

Quinoa

Alpha sprouts

Goats cheese

Oil, vinegar, salt, pepper and some chopped persil

Mine is GREEN, and the main ingredient in today's smoothie is the beautiful green pea shoot which is loaded with vitamin C, vitamin A and folic acid, perfect for all you pregnant ladies out there! ;)

An easy to make smoothie with a handful pea shoots, 1/2 apple, 1/2 banana, 1/2 orange, 1/2 avocado, 1 stalk celery, 1 chunk of ginger root+turmeric root, whatever leafy greens you find at home I used some spinach and rocket salad, 1 tbs coconut oil and flaxseed oil and some water.

I always try to use topping with different textures and flavours - crunchy, creamy, soft, sour, sweet etc to make it even more yummy and interesting.

Happy Friday lovelies! Make your skin glow all weekend with this amazing smoothie. Fills you up too so no snacking for me today. I've got loads of energy and I'm ready for the gym! See you all later :)

In my smoothie this morning I have strawberries, blueberries, 1 clementine, 1 banana, 1/2 apple, some water, 1 handful rocket salad, 1 handful spinach, 1 tbs coconut oil. Top it off with fruits, berries seeds and some coconut flakes

Warming Cinnamon Winter Smoothie

Cinnamon gives you that sweet and warm feeling (*it’s also loaded with health benefits such as weight loss etc) and I use it in my cooking, in smoothies and of course for baking. This morning’s cinnamon smoothie gave me a gentle wakeup and made it a lot easier to get ready and out to meet the snowy and cold Swedish winter weather. Now I’m off to the gym for a core session. :)

*Cinnamon kick starts your metabolism in the morning and keeps it on top throughout your day, it also decreases the cravings for sweets and food in general and increases the body's blood circulation. Just don’t overdo it, as for all delicious things too much is never a good thing.

Ingredients: 1 banana, 1 Avocado, 1 Kiwi, 1 kale leaf, 3 tsp cinnamon, some water, 1 Chunk ginger root + 1 chunk turmeric root (optional but if you want to optimize the health benefits this is a good choice). Add a few pitted dates or honey if you prefer a sweeter taste. Strawberries, coco flakes and some walnuts to topp it off.

Today I've been rushing and preparing for my Milan trip and tomorrow I'm finally off! :) My stressful day didn't leave me much time to prepare dinner so I took the vegetables I found in the fridge and voilà, dinner ready a few minutes later. Not only super filling and nutritious salad but it also helps keeping blood sugar levels in balance which means more energy and focus throughout the day. The colors are amazing and that alone makes me heart sing! Dress it up with whatever dressing you fancy. Olive oil mixed with some lemon, salt and pepper is my favorite.

The green lenses are sprouted and rich in protein and the red onion I've pickled. I love picked onions and I make sure to always have a jar with these pickled beauties in my fridge. They are crispy in texture and a perfect compliment to roast beef, salmon, spicy dishes, salads etc. Pickled onion deserves its own blog post so stay tuned..

Idag har jag stressat som bara den, mycket att förbereda inför Milano resan imorgon. Äntligen bär det av! :) Inte mycket tid att förbereda kvällsmat så idag fick det bli en snabblösning Led de grönsaker jag hade i kylen och hepp, middagen färdig några minuter senare. Det kryllar av nyttigheter i denna regnbåg-sallad. Förutom att den är mättande och håller blocksockret i balans, vilket ger mer energi och fokus under dagen, är den dessutom så färggrann att man blir lycklig ända in i hjärtat. Använd vilken dressing du känner för. Min favorit är olivolja med några droppar citron, salt och peppar.

De gröna linserna är groddade och innehåller en massa proteiner och rödlöken är picklad. Jag älskar pickad rödlök och har alltid en burk hemma i kylen i det fall en halvtråkig rätt skulle behöva piffas upp. Den är verklogt krispig i texturen och passar perfekt till t.ex rostbiff, lax, kryddig mat och sallader. Picklad rödlök är helt klart värt ett eget blogginlägg, så håll utkik ni som är nyfikna..

This morning I woke up with a terrible cough so went into my kitchen and grabbed the pineapple I bought yesterday at the supermarket, this certainly would come in handy a day like this. :) Apart from the sweet and fresh taste the pineapple is also a real flue fighter with anti-inflamatorical properties, filled with vitamin C and manganese copper and folate. One cup provides 132% of the recommend intake for vitamin C and 76% for manganese that helps the body's metabolism and fights inflammations.

Into today's smoothie bowl I've tossed almost half a pineapple, one small apple, one celery stalk, a chunk of cucumber, 1/2 grapefruit (make sure to remove the thin membranes around the grapefruit meat if you don't like the sour taste) and one banana. A chunk of ginger root and turmeric root, some water. Squeeze some lemon and add one pitted date or some honey if you want it sweeter. Let's se if this will get rid of my cough. Go flue fighter, go!

          -----------------------------------------------------------------------------------------------------                   I morse vaknade jag upp med en retlig hosta så ananasen från gårdagens ICA-besök blev ett självklart val i dagens smoothie! Förutom att ananas har en underbart söt och fräsch smak har den också antiinflammatoriska egenskaper. Den är fullproppad med vitamin C, mangan, koppar och folsyra. En kopp av frukten innehåller 132% av det dagliga rekommenderade intaget av C vitamin och 76% mangan, som hjälper till med förbränningen och bekämpar inflammation.

Till dagens smoothie har jag tagit nästan halva ananasen, ett litet äpple, en stjälkselleri, en bit gurka, 1/2 grapefrukt (ta bort de vita hinnorna kring fruktköttet så smakar smoothien mindre beskt) och en banan. Lägg i en bit ingefärsrot och gurkmeja rot, lite varten. Kläm i lite citron samt ha i någon tesked honung eller någon dadel om du vill ha din smoothie sötare.  Detta borde sätta stopp för min hosta!

Smoothie bowl

So easy to make and absolutely delicious taste! Also a healthier option compared to milk/yoghurt and cereals in the morning. Remember.. kale contains more calcium than milk so in combination with other balanced ingredients this is a far better option for your body, keeping it healthy nutritious and fit.

This here is my usual standard morning smoothie but I tweak the receipt slightly differently every day. I always use at least one type of leafy greens, e.g kale, spinach leafs, arugola. If you prefer it sweeter jus add a few pitted dates. Decorate with yummy berries, nuts, and seeds. Heavenly!

Translation SV: Den här smoothieskålen är superlätt att göra och smakar helt underbart! Jag föredrar grön smoothie på morgonen istället för att äta mjölk/yoghurt med flingor eftersom det är ett hälsosammare alternativ. Tänk på att grönkål innehåller mycket mer kalcium än vad till exempel mjölk gör och i kombination med andra ingredienser är detta ett mycket bättre alternativ för att din kropp ska hålla sig hälsosam, i bra form och samtidigt få den näring den behöver.

Det här är min vanliga morgonsmoothie, dock brukar jag ändra lite i grundreceptet men något jag alltid har med är bladgrönsaker, t ex bladspenat, grönkål, svartkål eller ruccola. On du föredrar sötare smak på smoothien så lägg med några urkärnade färska dadlar. Dekorera med bär, nötter och frön som du har hemma. Suersmarrigt!

Easy peasy lemon squeezy..

Must be the easiest fruit salad in the world - flavor bursting and packed with vitamin c. My energy level is right back on top this Tuesday afternoon. Just pick your favorite citrus fruits and slice them thinly, place on a plate and decorate with nuts.  That's what I call easy peasy lemon squeezey!

Morning Glory

This early bird woke up at 05.30(!) today and have been super productive this morning. Apart from a long yoga session I’ve also managed to get some work done. As I'm not the typical morning person I'm super surprised by my early mornings lately. So what’s the secret you might wonder? Well.. lets just say this is one of the benefits of drinking green smoothies every morning and eating Raw food. For the interested I'll be posting some more on Raw food and its benifits later this week. Now time to top up the energy with this Creamy Velvet Smoothie! Enjoy

Ingredients:

1 small avocado

1 banana

1 small orange

1 celey stalk

1 big chunk of cucumber

1 small chunk of fresh ginger root

Add some water, lingonberries (or cranberries) some cinnamon to the fruits and mix until texture is smooth.

Optional add 1 tbs of coconut butter and 1 tbs of flaxseed oil. Both excellent sources of good fats! Sprinkle some cinnamon, coconibs and walnuts on top.

Yummy morning sorbet smoothie.

I started my day with a yummy frozen berry smoothie. What a vitamin bomb! This tasty delight only takes a few minutes to make and will kick start your day in the best way possible!


Throw this into your blender:

- 1 cup rasberries (frozen)

- 1/2 cup blueberries (frozen)

- 3 dates (fresh)

- 1/2 tsp cinnamon

Add all ingredients to a blender. Blend for about 40 seconds (depending on your type of blender) until the frozen berries are all smooth. Sprinkle some raspberries, blueberries and coconut flakes on the top. Enjoy!
