Now when I am looking back I am quite happy that I didn't have that much money to spend when I lived in the UK. Obviously it was hard at times in order to be able to pay the rent, bills and have grocery to last for the month. There were days when I had to live on a bowl of rice for a few days. I never had any money over to go out and hang out with my friends, which made me feel quite lonely most of the times. Everything was so expensive in the UK. To live on a minimum wage (Β£7.20 an hour).

But now I am quite thankful for it as I do not waste money like I used to do before. Maybe my minimalist mindset takes part of that as well. Every single time I walk in to a store I always asks myself, will this item bring me any joy or purpose to my life? Do I really need it? Usually its a no and I put it back where it was.

This is something I will continue to carry with me into the new year and hopefully for the rest of my life.

I was quite happy that I could skip all the naughty food over Christmas, especially all the chocolates and sweets. For my first Christmas as a vegan I had vegan soy-balls and with it I made this potato roast, which was absolutely amazing! I thought I should share this with you guys to try it out :)


  • 3 cloves garlic
  • 750g potatoes
  • 1 1/2 tsp fresh rosemary
  • 150ml vegetable stock
  • 50ml olive oil

Instructions:

  1. Preheat the oven to 175C.
  2. Peel the potatoes, and cut into 5-7mm thick slices (I do this using the food processor).
  3. Rinse and drain the potato slices and transfer to a bowl with the garlic, rosemary and oil. Use your hands to mix everything together very thoroughly, so that each slice is coated with the oily mixture.
  4. Arrange the potato slices on their sides in a 20cm (8inch) round baking dish. Pour the hot stock over the top, then microwave on high for 10 minutes. (The dish can be set aside at this point and baked later on.)
  5. Transfer the dish to the oven and roast at 175C for 45 minutes - 1 hour, until golden brown and crispy on top. Serve immediately!

On christmas Eve we were at my grandparents house for lunch up until Donald duck was on TV. after that we went to my aunt's house to eat some more and then play the Christmas-present game. which was a lot of fun.  xx

Good evening guys! I've been at work the whole day. I got back for about 1,5hour ago. I am now makin' some dinner, washing some clothes and tidying the flat. I am very busy. Last day of work tomorrow before christmas. So I am quite excited. It's been 5 years since I spent christmas with my family. So I am quite excited about that. Sadly not my whole family will be attending, which really sucks :( xxx

I wanted to talk about something beautiful. An organisation called Tuva's Day . Tuva was a 4 year old girl from Varberg with brain cancer. She had a wish to have a Pippi Longstocking-birthday party and 31 of May her wish came true. Two weeks later she became an angel in the sky. After that her parent's started this organisation to give other children with cancer to get one of their wishes come true.

Good afternoon! today I was at work. me and my manager went for a simple deer makeup for the special charity weekend. A lot of customers was very generous and gave a fair bit of money to plant trees in the rainforest. I am quite eager to see the results on Monday. A very fun day (like usual) at work today. love working there. we are all a very happy bunch and it gives a happy vibe to the customers as well. we are happy, they are happy. a very calm shopping before Christmas. πŸŽ„πŸŽ

Throwback Thursday: When I met Kat Von D at Debenhams in London.

Good day! I just got myself ready. Made myself a pack-lunch for tonight. I will be working at two jobs today. First doing close at the Cafe, and then I am going over to the other job where I will be staying overnight and will finish at 9.30am the next day. Right after that at 11am I will be heading over to Body Shop for a few hours. Have a good Thursday everyone xx

Good evening! My allergic reaction seem to be better (for now) I am taking some allergy tablets at the moment just to keep it steady. Today I've been working at two out of my three jobs today. So quite a long day. Tomorrow I will be going to my third job where I will be learning the new menu and such. I hope I will be able to take it all in as I will be working on my own on Sunday. I guess it will go much quicker if I only had one job to focus on. But now I got three jobs my head feels a bit like mash potato from time to time, haha. I know I can do this. I just need to believe in myself a little bit.
