Good morning!

I stumble across this video on my news feed and I just find this absolutely amazing!
For those with a sustainable mindset this is something you should invest in.
The average family produces over 400 pounds of food waste per year.
I haven't done any research if they ship world wide, but whenever it comes to Sweden, this will be one of the first investments I will get to my household.

Happy Sunday Everyone,
and stay cozy xx

I simply don't understand why it should be so hard to find a flat in this country? At least I feel lucky enough to have a job, which I got quite quickly after I moved back. I have contacted a few about some flats. I will make a few calls to some private agency's and see if I will get any luck.

I started to play the Sims 4 again. and I am hooked! that's the reason why I have hidden myself from social media and the society, haha. but it's fun! I got lots of expansion packs now so there is lot of things to do. ,And on top of that EA released an update with toddlers now. I am so freaking excited!!

my sister is here now which is really fun
she brought her Nintendo Wii with her so we have been playing Mario cart and other fun games.

Have a good one xx

Good morning guys. hope you are well. I am feeling a bit low today... it's pretty cold, -12 degrees. I thought of going for a walk but I think I will stay in, drink some tea and read a book instead.

I made peanut butter smoothie this morning. I thought it was pretty good so I thought I should share the recipe with you.

ingredients 🌱
1 banana
1/4 cup almond milk
2 tbsp peanut butter  (organic)
1 tbsp cacao powder
2 tbsp coconut flakes
1/4 cup vanilla soy-ghurt or oatly's yoghurt
1 cup ice (optional)

Enjoy! 😊🌟

happy new year everyone! I hope you had a lovely new year's Eve. I was working until 10pm and then I took a taxi to my friend's house. they live in a lovely building with sea view and view over the town. it was lovely to stand there with a glass in one hand and see all the firework light up all over the place. it was pretty epic I must say. 😊

Today, me and my sister had a shopping day in Halmstad. was nice to just hang out as we haven't had the time to do it for such a long time. I did find a few nice things. out of all the purchase's I bought myself a book. I really want to start reading more books, so I made myself a promise to read more. but I am so fussy when it comes to that, I really need a book that gets me hooked after two pages otherwise I most likely won't finish it.

Anyways. hope you had a good day xx

I know I have posted videos with Koi before, but he is one person that I get very inspired from... and he shares the same values in life, like I do. Watch the video and get inspired. I have already got rid of some social media platforms and deleted a few people on instagram. I will now fill my instagram account with people who I think inspire and makes me excited about life. Those who posts about materialistic things in order to "show off" on their instagram accounts are now gone.

More about spirituality, veganism, minimalism, yoga, meditation on my newsfeed. :)

Now when I am looking back I am quite happy that I didn't have that much money to spend when I lived in the UK. Obviously it was hard at times in order to be able to pay the rent, bills and have grocery to last for the month. There were days when I had to live on a bowl of rice for a few days. I never had any money over to go out and hang out with my friends, which made me feel quite lonely most of the times. Everything was so expensive in the UK. To live on a minimum wage (£7.20 an hour).

But now I am quite thankful for it as I do not waste money like I used to do before. Maybe my minimalist mindset takes part of that as well. Every single time I walk in to a store I always asks myself, will this item bring me any joy or purpose to my life? Do I really need it? Usually its a no and I put it back where it was.

This is something I will continue to carry with me into the new year and hopefully for the rest of my life.

I was quite happy that I could skip all the naughty food over Christmas, especially all the chocolates and sweets. For my first Christmas as a vegan I had vegan soy-balls and with it I made this potato roast, which was absolutely amazing! I thought I should share this with you guys to try it out :)

  • 3 cloves garlic
  • 750g potatoes
  • 1 1/2 tsp fresh rosemary
  • 150ml vegetable stock
  • 50ml olive oil

Instructions:

  1. Preheat the oven to 175C.
  2. Peel the potatoes, and cut into 5-7mm thick slices (I do this using the food processor).
  3. Rinse and drain the potato slices and transfer to a bowl with the garlic, rosemary and oil. Use your hands to mix everything together very thoroughly, so that each slice is coated with the oily mixture.
  4. Arrange the potato slices on their sides in a 20cm (8inch) round baking dish. Pour the hot stock over the top, then microwave on high for 10 minutes. (The dish can be set aside at this point and baked later on.)
  5. Transfer the dish to the oven and roast at 175C for 45 minutes - 1 hour, until golden brown and crispy on top. Serve immediately!

Good evening guys! I've been at work the whole day. I got back for about 1,5hour ago. I am now makin' some dinner, washing some clothes and tidying the flat. I am very busy. Last day of work tomorrow before christmas. So I am quite excited. It's been 5 years since I spent christmas with my family. So I am quite excited about that. Sadly not my whole family will be attending, which really sucks :( xxx

I wanted to talk about something beautiful. An organisation called Tuva's Day . Tuva was a 4 year old girl from Varberg with brain cancer. She had a wish to have a Pippi Longstocking-birthday party and 31 of May her wish came true. Two weeks later she became an angel in the sky. After that her parent's started this organisation to give other children with cancer to get one of their wishes come true.
