Hello my beautiful friends!

A quick update: The weather has been crazy here in Sydney the last couple of days, and I really mean CRAZY! It started this weekend with a big storm, I noticed it when we were out this Saturday in manly (just by the beach) to celebrate one of my friend's birthday. When we walked outside in the middle of the night trying to find a taxi we got completely drenched in rain in about one second, and at one point I thought the wind would get us haha.. But after two days of really really heavy rain it got better kind of quickly and the only thing that was weird was that the beach was completely gone/under water because of the high sea level, so no more beach time for a while now I think haha.. And at the same time summer seem to be better than ever in Sweden and I am longing for some warm summer weather right now!!! Even though the winter here isn't too bad ofcourse, now when the sun is shining again ;)

Anyway, I did this amazing ice cream that really reminded me of summer the other day. It is so easy, healthy and DELICIOUS. If you haven't tried banana ice cream yet, you really have missed out on something! It is perfect as a snack, dessert or as a part of your breakfast, or just to every meal haha.



Healthy chocolate ice cream


2 frozen bananas (it's easiest if they are cut into pieces before you freeze them)
2 big dates 

2 tbsp cacao powder

0,5-1 cup almond milk


Strawberries
Cacao nibs


Put all the ingredients in a food processor or a blender. Start with adding just 1/2 cup of almond milk and keep adding a little at a time depending how much your machine needs to blend properly. You might need to pause it a few times to stir around by hand and make sure everything blends together. When you have a smooth texture serve it straight away and top with strawberries or other berries and cacao nibs for extra chocolate flavor and crunch!

. Sooo one thing that I find difficult to cut out of my diet is eggs. It is just such a great product that contains pretty much everything you need, protein, good fat, vitamins and so on..  It has so many good qualities but every time I eat an egg I think about all of those chickens that are treated so badly, and even though it says on the package that it is free ranged organic eggs it is hard to be sure that that is the case and that the animals have been treated in a good way and really have been able to run around free. So I am trying to find other alternatives and one day I was hungry for some scrambled eggs and I had a package of medium soft tofu in the fridge (I usually find that medium tofu is to wet and tricky to work with). So I thought why not make scrambled tofu? And the result was so good!! I added some kale and corn and served it on rice/corn cakes but that is not necessary ofcourse :) I can imagine that this would be yummy to add in a salad aswell!!


Vegan scrambled "eggs"



1/2 package of medium firm tofu
2 handfuls of kale, finely chopped
1 cup corn
Coconut oil
(to fry in)
Nutritional yeast
Turmeric
Cayenne spice
Black pepper
Himalayan salt

1/2 avocado
Corn/rice cakes

Heat some coconut oil in a non stick pan on medium heat. When the pan is hot add the tofu and cut/much it (just make a tofu mess haha) and fry until it gets the structure you like. Taste off with turmeric, cayenne, black pepper, Himalayan salt and nutritional yeast. Add the kale and corn and let the kale soften a little bit and then it is ready to eat.
There you go! So quick, easy and tasty :)

Hellohellooo! I have been a little bit sick this week (not really sick it is just a little cold haha but I feel sorry for myself okay). I have been freezing 24/7 and not even my body could handle that after a few days. The houses here in Australia have no isolation what so ever so now when the winter got here it got colder inside than outside our house.. But now we have some heaters in here and I am getting used to the cold weather so I feel like I am getting better! And it has been pretty nice to have a few quiet lazy days aswell haha.. Anyways, here comes a yummy smoothie recipe!



This is the perfect smoothie for green smoothie-beginners, because it doesn't really taste "green" (green smoothies often have more greens than fruit/berries). It is sweet, fruity aaaand delicious! It is also pretty filling so it's great if you are a bit hungry. I make this one for breakfast pretty often and I like to top it with for example more fruit, berries, gluten free granola, nuts or seeds! You can ofcourse drink it as it is or make a smoothie bowl of you want more of a meal :)






Fruity Green Smoothie

1 serving

1/2 banana
1/2 apple (I used pink lady)
1cup frozen mango
1-2 handfuls spinach
1/2 cup almonds
1 cup almond milk
2tbsp lemon juice

Hiiii my friends!
And yes, I am alive! I have finally found a good routine and balance in the life here in Australia. It has been very busy (and SO much fun) since I got here but now it is time for me to get some things done as well haha :)

So I am back to a great morning routine again. I wake up in the morning, go straight out of bed and do 10-15 minutes of yoga to wake up and get the body moving, then I drink a big glass of water and then I eat a long stress free and lovely breakfast. I try to vary my breakfast as much as I can, then I really look forward to it every day instead of just eating it because I need to. So today I made this "porridge" which was so yummy! I like to eat it in a big bowl with some nuts/granola , berries/fruit and some almond milk :) You can also use some natural sweetener (like honey/stevia/marple syrup) in the blueberry puree, and if you heat the porridge up it will get more firm in the consistency!







Juicy blueberry-buckwheat

1,5 dl buckwheat, soaked over night
3dl blueberries
1 banana
Juice from half a lemon
2/3 dl unsweetened vanilla almond milk
1tbsp chia seeds
1tbsp hemp protein (optional)



Start with rinsing the buckwheat with water. Then mix the blueberries (and natural sweetener if you want to) in a mixer until you have a smooth puree, take some of it out to use as topping. Then add the rest of the ingredients to the blueberry puree and mix everything together. Serve cold with the rest of the blueberry mixture and whatever topping you would like, or heat the porridge up until you get the consistency that you like! Enjoy!😍

Hey guys!
I hope you are having a good day! I am excited as usual when I wake up here in Sydney AND it is weekend wooho!:) And you know what?! I have drinken my first cup of coffee that I actually enjoyed!
I have always hated it and thought it tasted like dirt but my dear friend Molly here made me a latte with steamed almond milk, a little bit of stevia and some cacao and I actually thought it tasted good! It's not like I want to drink coffee all the time now but it is nice to know that I can just because it is a social thing :)


So, hummus is something I make a lot of, it is just the perfect snack! I have it on a piece of bread/crisp bread, in my salad, with crackers or just as a dip with vegetables! I usually have a few more ingredients like tahini, garlic etc but sometimes I end up doing it on whatever I have at home and this is a really easy recipe with ingredients at least I always have at home. And I love the nutty taste of the chickpeas and walnuts!


The easiest walnut hummus

1 can chickpeas
1dl walnuts
3tbsp olive oil
3tbs lemon juice
Himalayan salt
Black pepper


Mix all the ingredients in a blender/mixer until you have the texture you like (I like it with some texture). Season with salt and pepper and if you would like any other seasoning like cayenne pepper for example. Store it in the refrigerator for a few days. Enjoy your hummus and your weekend! ❣

Hi!
I had to take a break from here because it has been a lot going on in my life the past couple of weeks but now I am back!! I thought I would make a quick little update!

So when I moved back to Sweden from California I didn't feel like Sweden was the place for me anymore. Ofcourse it was fun to spend time with my family and friends again, but the darkness outside, the rain and the cold weather got to me after just a few days. I have always been very affected by the weather, when I wake up in the morning and look out of the window and it is grey, windy or rainy I immediately don't feel like going up at all I'll be low on energy the whole day. I don't want to meet up with friends, I don't want go and work out, I don't want to go to work, I don't want to do anything at all! But if I wake up and the sun is shining then I'll have the best feeling and practically run out to do something! This may sound stupid but that is how I work haha, my body need the sun to work!! I feel like I can be the best version of me when I live in an environment that I like, I get much more positive and happy! The

If you are not pleased with your situation in life then you have to make a change. There is only YOU that decides how you should live YOUR life, and there is no one else to blame if you are not happy than yourself. That is the bitter truth. You are the boss over your life, so do whatever you need to do to feel pure happiness every single day. And for me, that was to move all by myself, without any kind of plan, to a completely new city on the other side of the world. I want to grow and develop as a person and felt like it would be a step back if I stayed in Sweden.

After just four days here in Sydney I had found a place to live, a job, and a few new friends. If you believe in yourself, and think about what you want then everything is going to work out! I guess I had some luck when I got here but nothing is impossible. Every day I wake up feeling excited for what this day has to offer so I am living the dream and I am so thankful for everything I am learning about life here!

Sydney is really an amazing city, it has the beaches, the "big city feeling", beautiful nature, nice and open minded people, the perfect weather (even tho it's been raining a lot since got here, and the winter is coming soon), great food and yea, the only thing that is not the best is the public transport and the fact that it takes a while to get around here. But I can live with that haha. There are sooooo many places to explore in this city, so I am out on adventures every single day! Today I am laying in the sun on newfound beach with 30 degrees Celsius, with my best gal Molly, listening to music, reading books, doing beach workouts, talking crap, just a perfect day as usual! :)

I hope you are all living your dream, and if not, don't be afraid to make a change! You deserve to be happy ❤️

I will start posting recipes again, so keep your eyes open for some delicious vegetarian and raw food recipes ;)

After breakfast I had a feeling that I needed to embrace.. I really felt like cleaning my room properly and get rid of all things that I do not use anymore. I ended up with three huge bags of old clothes, jewelries, make up, hand bags.. You name it! It felt so good when I was done. 

On the afternoon I went out for a run followed by 30 minutes of yoga. I love when I go out for a run even tho I really do not feel like it, and it results in being a great run! Those running sessions when I go out without any time or distance goals, with no pressure what so ever, are almost always the ones I enjoy the most. It is such an awesome feeling when you don't have to think about anything, the body just runs by itself, it is not hard at all and it feels like you could go on forever, it is just to enjoy the ride.. The best feeling!!! Also I really like to combine running and yoga, the body really feels great afterwords :)

Here is what I had as s night snack: A cup of ginger/lemon grass tea and rice cakes with raw peanut butter and banana! It is the perfect snack which has been one of my favorites for years. It is filling, yummy and easy :) Another tasty combination on rice cakes is almond butter with strawberries.. 🤗

Hey guys! I hope you all had a fun weekend, I sure had! The concert was amazing and we had so much fun.. A little bit too fun maybe haha. Sunday was pizza + movie + girl talk the whole day at my friends house. It is totally okey to have those days once in a while too! But that was the reason for the bad update here :) oh, and I just got my visa for Australia!!!! Flight will be booked tonight or tomorrow 😬😬 can't believe I am going to do this.......

Another Monday, another week, another oatmeal. Oatmeal is the only option for me on Monday mornings! A perfect way to start a new week, so let's make this week awesome!!



Blueberry oatmeal with baked banana

1,5 dl rolled oats
2 tbsp chia seeds
3 dl water
1 tbsp coconut oil
1 dl frozen organic blueberries

One ripe organic banana
A handful of walnuts
Shredded coconut
Hemp seeds
Dairy free milk

Slice the banana lengthwise and add some coconut oil in a pan, fry on both sides on medium/low heat until they get soft. Add the walnuts and roast them in the coconut oil if you want to! Put together rolled oats, chia seeds, water and coconut oil in a pot and bring to boil. When the oatmeal has the right texture, add the blueberries. Serve the oatmeal with the baked banana and the walnuts, shredded coconut, hemp seeds and a dairy free milk! 🤗 enjoy!

Today I woke up soo late, at twelve o'clock to be precise.. I really love to sleep out but I also hate to wake up and feel that I have missed half of the day. Well well, this afternoon I'm going home to a dear friend of mine who I have not met for eight months or so! And tonight we are going to and see Erik Hassle play, I'm so excited!! After 11 hours of sleep I should be able to dance all night haha..

So when I woke up today it was brunch-time so I threw together some banana pancakes for me and my Mom! Can you ever get tired of this delicious dish!? It has been my favorite brunch dish for years! If you have not tasted it yet, you must do.. Or else you are really missing out on something !! The base recipe only contains banana and eggs but I have always rolled oats in to make it more filling and also I like the texture it brings. Do you want some variation here are some things you can use: cinnamon, 1tbsp peanut butter, blueberries, chia seeds, coconut flakes, shredded broccoli.

This was what I used today:


1 portion/ 5 small pancakes

1 ripe banana
2 organic eggs
2 tbsp rolled oats
0,5 tbsp chia seeds
Coconut oil
(to fry in)

Mush the banana in a bowl with a fork (it is just tasty if it is not so perfect), add the eggs and whisk with the fork until everything is mixed together. Add the rolled oats and the chia seeds. Fry as small pancakes on medium heat in a pan with lots of coconut oil! It takes some practice to flip the pancakes without breaking them, but be careful and make them smaller if you are struggling! It is also much easier in a non-stick pan.

Serve lots of fresh fruits and berries, chopped nuts and coconut cream (I will post a recipe on that another time) and enjoy! 💖

Hey! It is finally Friday!! I woke up early today, so I did thirty minutes of morning yoga. To me, yoga is the absolute best way to wake the body and mind up. Usually I am really slow in the morning haha, I am much more of a night person.. But after yoga I feel like I am filled with lots of energy, and prepared to rock the day!

Sometimes I don't have that much time in the morning, especially not after a yoga session, on these days it is perfect to have something prepared from the night before so I don't need to feel any stress in the morning. Overnight oats are such a good breakfast because with all of those slow carbs you will feel satisfied and have energy for hours! And you can use any kind of liquid and seasoning that you want.


Overnight oats

1,5 dl rolled oats
1 tbsp chia seeds
1,75 dl unsweetened apple juice


1,5 tbsp Hemp seeds
Half a pear
1 kiwi
1dl of blackberries


Before you go to bed, put all the ingredients in a glass jar with a lid. Mix the ingredients together with a fork until the chia seeds are separated. Put the lid on and keep in the refrigerator over the night. You can also prepare the topping so that everything is ready to eat the next morning!
