A quick update: The weather has been crazy here in Sydney the last couple of days, and I really mean CRAZY! It started this weekend with a big storm, I noticed it when we were out this Saturday in manly (just by the beach) to celebrate one of my friend's birthday. When we walked outside in the middle of the night trying to find a taxi we got completely drenched in rain in about one second, and at one point I thought the wind would get us haha.. But after two days of really really heavy rain it got better kind of quickly and the only thing that was weird was that the beach was completely gone/under water because of the high sea level, so no more beach time for a while now I think haha.. And at the same time summer seem to be better than ever in Sweden and I am longing for some warm summer weather right now!!! Even though the winter here isn't too bad ofcourse, now when the sun is shining again ;)
Anyway, I did this amazing ice cream that really reminded me of summer the other day. It is so easy, healthy and DELICIOUS. If you haven't tried banana ice cream yet, you really have missed out on something! It is perfect as a snack, dessert or as a part of your breakfast, or just to every meal haha.
Healthy chocolate ice cream
2 frozen bananas (it's easiest if they are cut into pieces before you freeze them)
2 big dates
2 tbsp cacao powder
0,5-1 cup almond milk
Put all the ingredients in a food processor or a blender. Start with adding just 1/2 cup of almond milk and keep adding a little at a time depending how much your machine needs to blend properly. You might need to pause it a few times to stir around by hand and make sure everything blends together. When you have a smooth texture serve it straight away and top with strawberries or other berries and cacao nibs for extra chocolate flavor and crunch!
