I've decided to go back to jogging because I'm challenging myself to run Göteborgsvarvet in May. However going to the gym was interesting but not really my thing. If I'm going to exercise I want to have fun doing it and going to the gym was lacking that.
I have now completed a successful year sitting in Elevkåren. I have had a lot of fun meeting new people and planning events and so forth. I feel that being engaged and socializing with a lot of new people daily made me overcome my social anxiety to some degree. I feel more comfortable socializing now than I've ever been and I believe that's because of Elevkåren.
I haven't collected a lot of evidence but since Elevkåren is the ones planning and executing all the events at school it's basically a given.
I decided to not continue because of school work and also because I want to have new experiences within my CAS!
Mondays: Ankels and chest, some stamina training.
Tuesdays: Arms and back
Thursdays: Abs and legs

Roasted sweet potato with butter, salt and a parsley/oat fraiche filling
This was a hard one! I celebrated easter at my dads and I really love "sill", so I made a vegan version using eggplant (or aubergine) and a delicious garlic/parsley sauce. I had to dry the eggplant for 2 hours and then cut it up into pieces and boil it in salt/sugar/garlic powder water for a couple of minutes. It smelled and tasted almost exactly like "sill"!
I made some regular burgers with an avocado mash, a cilantro/koriander mix and some roasted red onion pieces inside. Also some on the side with potato wedges.
I made a lasagne, with vegan crumble in arrabiata sauce and a vegan bechamel
I felt a bit german so I fried a schnitzel. I also made a common brown sauce with potatoes, some green vegetables and a side salad with all different kinds of leafy greans, vegetables, seeds and nuts. (And some drizzled balsamic vinegar on top)
I made hamburgers again containing burgers, a quick coleslaw, pulled mushrooms (not visible in picture 2) and fried zucchini. It was delicious.
I made 2 thick-crusted vegan pizzas. One with tomato sauce, soy sausage, spinach, tomato and homemade mozzarella. It was my first time making cheese so I made the mozzarella using tofu, soy milk, garlic and onion powder and starch. I mixed it up, put it through a strainer and then put it in a pan on medium heat until it started to get thicker. It works well to put on pizza since it's a goo-ey texture but it's not a solid.
On the other pizza I just had some tomato sauce, soy sausage, pesto and artichokes. This one was actually my favorite even though it didn't have cheese on top.
A salad with all sorts of leafy greens, some avocado, some olives and also some chili marinated soy bits. Just some olive oil and salt on top.
I made burritos for the first time and it was sooo good. I had some vegan crumbles with taco spices, a bean mix with tomatoes, some guacamole and salsa on top. I just folded it (with directions of course, I had to try a couple of times until I finally got it). Then I just put it in the pan for a short while which helps it keep the preferred shape. It turned out really nice.
I make food at home everyday but this is just a collection of what I've been making that is new. I hope this is enough evidence for now :)
I decided to switch my Activity from jogging to yoga since I really don't enjoy jogging (maybe something I should've thought of before-hand haha...) Oh well, at least I lost 5 kilos and losing weight was ultimately my goal so I think that's great! I also felt my endurance increased a lot by only running about 2 days a week.
However, I wasn't really motivated at all to do this and I think exercising should be fun and not a drag!
Today I made hummus by mixing chickpeas, garlic, olive oil, some olives, chili peppers, water and some spices. Since my blender doesn't work I had to mash it using a mortar. This was quite a long process but I consider hummus a huge staple in a vegan diet haha! So I guess it was worth it cause it turned out delicious.
Using my hummus, I made two burgers with Fry's vegan chicken burgers, some romain lettuce, tomatoes, oat fraiche, home-made tahini-dressing and avocados in between two seed-breads spreaded with hummus. I also had some oregano and pepper fries with some hummus to dip.
This took approximately 2 hours.

Debate Club started off pretty unorganized and improvised but has now later on become better and better. Everyone is really engaged in the debates and everyone is well prepared. I myself have improved both my debating skills and leadership skills. (as I am the debate controller every other week)
Friday 4/12 we had a debate for an hour.
Jag har sprungit i ca 1h sammanlagt denna veckan och eftersom detta är en ny CAS-aktivitet för mig så är det första gången. Jag ser redan förbättring från förra gången gällande uthållighet med mera!
