Hey Beautiful! How are ya?

On our way to Australia, my family and I stopped in Singapore to visit my mum's family there. It was only for a couple of days, but was still heaps of fun. We went sight seeing, shopping, walking around the city and of course eating loads of the delicious food there. (could you guess that was probably my favourite part? haha) Let me tell you, the food was amazing!!

We visited the "Gardens By The Bay", the "Esplanade" and had dinner at the Bay there, and also went on a Night Safari.

So here are some of the photos I took during our short stay. :)

Currently enjoying the weekend in this hipster cafe near salzburg with great ambiance and cute drinks.

School has been pretty busy lately, but thank god, only 3 more weeks to go! Then it'll be off to Australia! I honestly can not wait!!

Lately I have had the feeling of needing a break. Like, not just a stress-free weekend, but a getaway - and a long one, I have just been having the urge or feeling to escape.. (this sounds so che​​esy ughh) I don't know if you get what I'm tryna say, but do you ever feel like stuff is too much and it'd just be nice to rest and then come back and it'll be better...?

I'm not saying, my life sucks, actually I love it, my family, my friends, church, the things I enjoy and do in my free time.....I just think I'm soo ready for summer break. A break from the usual drama, the german language and Europe will be wonderful! I can't wait to see my family again, and be somewhere different. And then come back missing all my friends here. haha.

My summer will be spent (hopefully) at the beach, with family and friends, travelling and I hope to get a summer job in a cafe as well! Maybe I'll write a more detailed summer bucket list soon. :) Who else can't wait for summer to travel and have fun?!

17 random things that i absolutely love

this post idea came in my mind this morning whilst i was tidying my room. i often think 'oh i love....' so here is an unplanned bunch of things that came to my mind first. (apart from the obvious things like my family and friends :)

i love:

1. watermelon - well duh, i do have a watermelon in my hand in the picture above. but honestly watermelons are like one of the best fruits ever!! especially summer is coming - watermelon galore! (just a heads up: this post will continuously mention food sorry haha)

2. inspiring quotes or bible verses - just look at my instagram feed, most posts have a caption of a quote i have been obsessed with. tell me a good quote to make me smile :)

3. singing - i just love singing, also playing my guitar at the same time and singing my favourite songs

4. decorating - anything from my room decoration, school presentations, invites, notes to birthday cards....

5. dressing up really fancy -like for balls, weddings, fancy parties or even church. i have loved this since i was little but aahh it's just so much much fun, doing my makeup, hair, choosing jewellery and then wearing the perfect dress!

6. listening to my current favourite songs - i'm sure most people can agree, listening to music is life. i listen to music all the time, even now whilst i'm wringing this blog post i'm listening to a worship playlist

7. watching youtube videos (haha i could spend hours!)

8. having a beautiful smelling perfume or scent on - flowery and sweet smells are gorgeous! who doesn't like pretty smells?!

9. macarons - ah my loves - whoever does not know these are missing out! french colourful biscuits out of meringue and almonds - they. are. heaven.

10. baking - also cooking and just generally preparing food. food omg!! but baking is the best. like mentioned before; making macarons, birthday cakes and just trying every cool recipe on pinterest!

11. reading a good book - when i have time i could read forever, but seriously a good book is everything (currently i am reading 'milk and honey' by rupee kaur, a book filled with poems - its is amazing! highly recommend!)

12. when people/friends notice little things about me, and make and effort to show so (like saying something nice, or writing a cute note....)

13. when my room is tidy - haha kinda strange, but it just makes my happier and life so much easier!

14. coffee!!! no more words needed.

15. beautiful flowers - aah flowers are so beautiful! i have already planned, when i have my own apartment i will always have some fresh flowers on my dining table :)

16. acai bowls - aka smoothie bowls, they are delicious, healthy, fun to decorate and oh so instagrammy

17. travelling - i have travelled my whole life and lived overseas half of it. travelling is something i absolutely love doing and will hopefully keep on doing for the rest of my life.

oh, trust me there are so many more, but i'll keep it at 16 - for now ;)

Weekend, I can't wait for you. It's currently Thursday night - one more day of school and then the weekend!

sleeping in, pancakes and smoothies for breakfast, no school stress (at least a slight break from it all), being able to enjoy this warm weather (28 C wow) and just finally being able to get all my non-school related things done! ugh if you haven't noticed yet, I am so looking forward to the weekend!!

School can be really stressful, and getting into a routine of lack or sleep just sucks. I just had my last Spanish exam for this year, and am pretty relived. Still loads more work to be done. Either way if you take every point on your "To Do List" step by step everything becomes so much easier.

I haven't had time to blog lately, so this short post is a baby step to another more detailed post. Maybe I'll write about summer outfits (i've been lovin wearing summer dresses - was about time!) or maybe another recipe (i love food haha) or even a post about some interesting topic - still to be thought of..

I hope you have a more than pleasant weekend with people you love spending time with. Do something that makes you feel happy, sing a love song, read a book, go for a walk, bake a cake, sleep more, do something you have always wanted to do, but have never had the guts to....

okay this post is getting cheesy, i better stop now, I guess all I want to say is; enjoy the moment and my 'moment' right now, is the weekend where I have many simple things planned, that make me happy. that's all for now

So, who doesn't know these sweet potato fries? I mean they are all over pinterest and instagram under #healthy #vegan #sweetpotatofries But because they are so delicious, I had to share my favourite version of these healthy fries with you guys! I hope you enjoy my take to this trend and get just as obsessed as I am with them.

First step is cutting your sweet potato into thin slice like the picture above. Next soak them in cold water for 30-60 mins. This makes them quicker to cook and crispier.

Step 2 is to add the spices! Once you have rinsed the sweet potato, towel dry them and place them into a zip lock bag. (this makes it easier for the fries to be coated with all the spices.) You can also use a bowl instead, but it's just way easier and less clean up with a bag.

Pour the cornstarch into the bag and mix till coated. Next add the olive oil and all the spices (except for the salt) and combine. (the salt will be sprinkled on top at the end, otherwise they will get soggy)

Now place your fries on a baking tray lined with parchment paper. I needed two trays for all the fries. Place the fries, so that they are not touching each other. This makes the cook faster and stay crispy!

Bake them for about 30 mins at 200 degrees celsius on fan.

And voila here you have it your delicious sweet potato fries!! I served mine with mayonnaise and a homemade bruschetta topping. (if you want the recipe for that just comment below!) Of course you can eat them with whatever you want, guacamole is great or whatever you want!

The full recipe is below:



  • 1 large sweet potato
  • 2 tsp corn flour
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • himalayan salt to taste


  1. Peel and julienne* the sweet potato. Place them in a cold bowl of water and let them sit for 30min-1h.
  2. Pour out the water, rinse the sweet potato and pat them dry with a kitchen towel.
  3. Place them in a zip lock bag and add corn flour. Mix till coated.
  4. Add olive oil, paprika, pepper and garlic to bag and mix. (Do NOT add salt, If you do, it will turn the fries soggy)
  5. Place them on a baking tray that is lined with baking paper and make sure there are gaps between them.
  6. Bake your fries in oven on fan for 30-45 minutes at 200°C.
  7. Season fries with salt and enjoy! (they go very well with guacamole or any sauce of your choice!)

*julienne is just a fancy word for slicing vegetables into thin strips. hey you learnt a new cooking word today!

Hello Beautiful!

Today I am showing you my favourite healthy pancake recipe. With pictures! I have tried many banana pancakes recipes, and have now come up with my own. It is easy to make and delicious.

This recipe is a serving for 1 person, but you can easily double or triple it depending on for how many people you are making it for.

For the ingredients you need:

one banana, one egg, baking powder and almond meal.

(I will have the whole recipe written down below)

First of all combine the egg and baking powder in a bowl together.

And mash the banana in another bowl.

Pour the mashed banana in the egg mixture and stir. It should look like the picture above.

Next add the almond meal and stir. Your mixture is ready and will look like this.

For frying the pancakes I use coconut oil, since I love it! But it also gives the pancakes a nice taste and is healthier than frying in butter or canola oil. (You can also use coconut oil for soooo many other things, I might write a blog post about that one day! )

Anyways, nows time to fry your pancakes by first coating your pan in coconut oil and then placing tablespoons of the mixture in the pan. Flip the pancakes once golden brown or after about 1 minute. But be careful, they are fragile!

For toppings I used sliced strawberries, bananas and walnuts. But you can use whatever you want, some options are: raspberries, blueberries, cashews, coconut flakes, chocolate chips....

Don't forget maple syrup to give your pancakes that extra sweetness and besides - what are pancakes without maple syrup?! If you prefer a healthier option, you can also use agave syrup or any other sweetener you prefer.

And your pancakes are done! Enjoy them with someone you love!

Here is the full recipe:

4-ingredient almond banana pancakes


1 banana

1 egg

1/4 tsp baking powder

4 tbsp almond meal

coconut oil (for frying)





maple syrup


  1. Mix together egg and baking powder in bowl.
  2. In a seperate bowl mash the banana.
  3. Add the mashed banana to the egg mixture.
  4. Stir in the almond meal.
  5. Place a teaspoon of coconut oil in a frying pan and spoon tablespoons of the batter in the pan. You can fit about 3 small pancakes in one pan. Flip the pancakes after about 1 min or when golden brown, but be careful since they are very soft, unlike normal pancakes.
  6. Place the pancakes on a plate and sprinkle with your favourite toppings.
  7. Enjoy!

I can't believe I haven't written a blog post for so long! You know the feeling when you are planning on doing something and then just keep on pushing it further away and never getting it done! Well that's what I felt like before I started writing. So welcome beautiful person on the internet! I hope you enjoy my blog post today, although I am still not sure what exactly I will be writing about. I'm such a good blogger, right?

Anyways, writing helps me feel relaxed and letting my thoughts become words is just the best feeling ever. (so cheesy ik *cringe claudia) When ever I have a million things to do - and am very stressed, I write a to do list. Just ask any of my friends, they know I have a to do list for literally anything! To do lists give me an overview of what I need to do, and make me feel productive once I can tick something off, like I'm not wasting my time as usual. hmmm.

At this point I still don't know where I'm going with this blog post. I am currently at home, enjoying my easter break and the wonderful season of spring.

My family and I were in Vienna the other day. Vienna was wonderful, we visited a museum, ate sushi and vegan ice cream (sooo goood), wandered around the city and did some shopping.

How about this blog post becomes a spring/easter break vlog written version. (with pictures) Is there a name for a vlog but on a blog?....idk, i wonder..

So for spring break my family decided not to go away somewhere, since we will be going to Australia for all of the summer holidays. Which will be a lot of travelling, so this is a holiday where I'm not travelling. Honestly I love it! It's really nice to be able to hang out with friends and just do things you've wanted to do at home, but have never had time to do with all the school stress. All these things don't happen whilst in another country or city. Don't get me wrong - I am obsessed with travelling, but also I appreciate being home and all the things that come with it!

Some of the things I have done so far are spending some lovely days with friends, celebrating my beautiful friends 16th birthday, spring cleaning (ugh i know sooo boring!) and a day trip to Vienna.

The reason we even have this holiday is because of easter. Easter. What exactly does that mean to you? I wonder what the word actually means - let me google that quickly....Old English ēastre ; of Germanic origin and related to German Ostern and east; perhaps from Ēastre, the name of a goddess associated with spring.

name of a goddess associated with spring - what a wonderful meaning! Well easter to me, as a christian is a wonderful holiday because it is the time that we remember Jesus - how he was crucified and then rose to life again. All of this to take away my sins and your sins. So that if we believe we can have life forever with him in heaven. Whilst reading my bible today, I read the book of Matthew - the part that talks about the Easter story. I was reminded how Jesus didn't have to die, it was his choice. Because of his love for all people. How great is my God, that he loves me and you so much that he died for us and rose again. That is what Easter means to me.

On my bucket list (or to do list) for the rest of my holidays are doing some water colour painting, writing another blog post! (hopefully you will enjoy reading x) and reading some more. (maybe one day I will write a blog post about some of my favourite books).

So this post was messy - to do lists, vienna, the meaning of easter, spring break and ...Well I guess you could call this "Claudia's Thoughts In Writing" haha so weird. Whatever, we'll see what normal blog post title I come up with in the end.

I hope you have a lovely easter time with your loved ones, and maybe think about what easter really is about. Eat loads of chocolate eggs - cause it's a great excuse during easter time. Diet starts after easter!

Can this amazing weather please last forever?

I am officially in love with spring.

The other day was one of the most delightful days I’ve had in a while. The weather, like I’ve mentioned repeatedly already, was stunning. It was warm, not hot, just right. The flowers are starting to bloom, birds are peeping, and people are happier.

Not only these things, but also, spring means; good bye black heavy winter coat and hello colourful light clothes!

Here I am sharing with you one outfit I put together for a day walking around in the city, parks and eating delicious food!

I combined a red crop, I bought in Australia with black trousers and flats, both from h&m.

My bag is a faux leather bag with a gold touch. It is very versatile since, it suits most outfits and you can

put a lot of things in it.

For accessories I chose a rose gold cross necklace and a long gold necklace. Don’t they look nice together?

The rest of my jewelery are my everyday jewellery. The earrings are diamond studs and my rose gold watch.

After a long walk in the park and the city we obviously couldn’t help but get some ice-cream. If you love rafaelos just like I do, the creamy white chocolate and coconut ugh! ....then you have to try rafaelo ice-cream, it’s more than delicious!

So this was one of my first spring days this year, and I can't wait for many more!  Now I have to get 

back to studying maths, wish me luck, ha

Spring is here, the sun is out and the days are longer. The warmer weather outside has inspired me to reblog about a healthy treat I created a while ago. So I have this amazing and delicious healthy ice cream recipe for you! It is packed with berries, mangoes and peaches. no sugar and no unhealthy fats! Yum.



  • 1 cup frozen strawberries*
  • 1 cup frozen peaches*
  • 1 cup frozen mangoes*
  • 1/2 cup greek yoghurt
  • 2 teaspoons agave/ maple sirup
  • 1 tsp chia seeds
  • 1 tsp coconut flakes

  • Method

    1. Place the frozen fruits into a big mixture bowl.
    2. Blend with a hand held mixer/ blender.
    3. Add greek yoghurt and sirup and blend well.
    4. Scoop ice cream into a bowl and sprinkle with chai seeds and coconut flakes.
    5. Share it with someone you love and enjoy!

    *instead of my fruit choices, you can swap them for other fruits you adore more! as long as they are frozen as well
