Sweet potatoes are currently one of my favourite foods of all time. They are completely delicious, good for you and also pretty damn cheap too. There are lots of ways you can enjoy them and one of my favourite ways is to thinly slice them, coat them in a thin layer of oil and bake them in the oven. Once they are nice and crispy (I find they take about 15-20 minutes), take them out of the oven and add your favourite seasoning, salt and pepper or dip them in some sauce (maybe even houmous!) and there you go, we have an incredible vegan cheap snack idea!

Áine is the creator of two amazing vegan cookbooks called 'Keep It Vegan' and 'The New Vegan'. They both have amazing recipes inside and stunning photos so you can see how the end result will look. I can't look through her books without wishing I could be tasting them all!
Her newest book 'The New Vegan' has loads of tips on how to explain first becoming vegan to people who ask, eating out, the sources of nutrients we all need, different meal plans, cruelty free homemade beauty as well as all of the delicious recipes. She really has got everything covered.

She is a beautifully talented (and gorgeous!) lady who really inspires and encourages me so that's why I thought I must share with you guys too. First discovering the horrors of the meat and dairy industries can make us feel incredibly frustrated. When I first turned vegan, I had so much rage inside of me that I didn't know what to do with it. I was asking myself over and over...How could they do this to these poor animals? And why do these industries trick us into thinking that this is okay?
I watched a few documentaries and talks on YouTube that really helped me when first becoming vegan by educating me and helping me to decide whether I was going to be vegan and they were...
Cowspiracy (currently on Netflix or available to own on DVD)
They helped guide me to decide that the vegan lifestyle was 100% for me and that I was never turning back. Then what also helped me were finding different inspiring vegan instagram accounts (because I'm addicted to instagram!) and checking on them for recipes, guidance, etc, just search for vegans on instagram and you'll find plenty of great ones.
Finally what has really helped me is picking up some vegan cookbooks (my favourite is called Keep it Vegan by Aime Carlin) and also searching 'what I eat in a day vegan' on youtube and looking at all the fabulous, delicious meals people eat and how to prepare them.

Going vegan is a wonderful choice for your health, the environment and of course it is amazing for the animals! I have been vegan now for around 7 months and I'm learning so much and loving it so much that I thought it would be an awesome idea to share my journey. So I guess, here we go!
