So so nice to be back at the gym and the habit to cook almost every day. I figured that I need to cook pretty often and change meals often to be able to enjoy home cooked food for lunch. I really have a problem with heating food up, just taste really bad for me but by making only two boxes at the time makes it much easier for me. It doesn't feel old!
But please everyone! Don't microwave your food in the plastic lunch boxes, it's way better to put it on a plate. We don't need more chemicals in our body than we already have. 🙏🏻
So, back on my first body pump class today, really nice and really heavy!! But I guess after a few classes it will feel better. I'll actually go on the next Quarterly workshop education in Gothenburg and eventually start teaching classes again. I'm so excited!!
Yoga is the best way to end my day- makes me feel so much better after a long day of hard work. Out bodies are so amazing to be able to deal with everything we go through during a day- amazing!

Made some delicious thai food this night after my first try of coming back to body combat after my foot injury. It was difficult and especially all the jumping and kicking but at least one step closer to be back!
This red curry Thai food is so good, I actually used both chicken and tofu in this one! Usually I use qourn, which is a vegetarian option of chicken, but didn't have that at home today so I mixed chicken and some tofu with all the vegetables. It turn out to be really good! In area of only having rice I combined it with lentils which makes it a little bit more filling!

Been a nice day off fixing apartment, cleaning and cooking! Finally got to see my friends new born baby too, amazingly beautiful. Can't wait to see this baby girl grow up!
Really nice night, did some Celsius demo at the gym and ended the night with yin yoga, so so nice. If you haven't tried yin yoga you have to now! It's seriously the best thing ever and you feel so good in your body after.
Cooked some vegan lunch boxes today with tofu, mushrooms and bean pasta. High in protein, healthy fat from the milk free half cream I use and good carbs from the bean pasta. Both gluten, free from milk protein and lactose free! Finished with some smoothies made of berries and fruit for tomorrow's breakfast.

I'm seriously addicted to this one! If you're not starving but need a little meal or snack I think this is great. Feta cheese, avocado and some yellow bell pepper on a piece of cracker. So so good!!
So thankful for having this beautiful day off to spend with my lovely sis, amazing friend and the best dad!!

I have a feeling that these last couple of days are probably the last days of summer we get this year before the fall is coming, which will be great too of course. But who doesn't love Swedish summer! :)
Really tired at work today but I did stay for an extra 1,5 h bc it's soooo much to do, which of course is nice but feels hard to leave work when it's so much left to do.. But but, I guess it's a good thing to be a workaholic.
Amazing weather today so I did go for a power walk and then some grocery shopping! Trying to stay with as many vegan or vegetarian meals as possible. I just don't feel for that much meat now, don't know why! But believe me, with eggs, cheese, beans, lentils and all different kind of vegetarian options I have I'll be more than ok. We eat way more protein than we need to and what outer body can take care of. Excited to go back to some routines and workouts now when fall is kicking in.
I bought this healthy cracker mix and you only blend it with water and let it be for 30 minutes and then you make a thin layer on a baker tray and put it in the oven for 45 minutes and 175celsius. Tastes really good! To have as a snack with some avocado, tomatoes, feta cheese or maybe some eggs.
I also did the small cottage cheese pancakes with two eggs, this fiber flour at the pic and 100 gram of cottage cheese. It's a perfect snack or smaller meal for the afternoon or maybe before lunch!

He is the most caring, honest, unselfish and supportive person I know and will always, no matter what, stand by my side to support me and help me as the very best friend he is. I'm so happy I bumped into this person who now is one of my very best friends! We all should be more thankful for the people we have around who are making us to a better person. ✨
I'm seriously craving traveling now.. And it's only been a week since I came back from Corfu. I can tell that I easy get tired, bored and exhausted of just being home working and not doing anything exciting. But I'll try to cheer me up and be thankful for these nice days in Sweden during the summer! Hopefully I get some sunny days when I'm off next time...
