made this banana pancakes this morning and they never get old! Best part of the morning really!

3 bananas
3 eggs
110g Russian yogurt (or quark Kesella)
1/4 cup almond flour
1/2 cup coconut flour
4 tsp baking powder
1/2 tsp vanilla powder
2-3 tsp gingerbread spice

1 tbsp honey (can be increased if you want a little sweeter taste.)


Preheat the oven to 200 degrees. Whisk together the banana, eggs, yogurt and honey. Mix all dry ingredients well and fold into the banana mixture. Click into the muffin cups and bake in middle of oven 13-15 minutes.
