Hej alla fina!!

Hoppas ni haft en underbar jul med era nära och kära! Min har varit helt underbar!💕
Har ätit mycket gott och skrattat mycket. Gjorde ett av mina favoritjulgodis innan julafton så har bara gått och ätit på dem!! Vet inte riktigt varför det skulle vara speciellt för julen men har bara gjort det på julen förut... Doppade torkade aprikoser i mörk choklad, använde mig av sofree's mörka choklad som jag hittade för första gången i mataffären härom dagen och det blev supergott!! Sen älskar jag o strö lite havssalt på chokladen innan den stelnar, är verkligen besatt av salt!!!
Hursomhelst, det är verkligen ett så gott, nyttigt litet snack!! Annars har det inte hänt så mycket här hemma, men det är rätt skönt!! :) (Observera det extremt vackra (....) pepparkakshuset)

Det känns helt ofattbart att det är julafton imorgon?! Jag har haft sån julkänsla och varit taggad sedan min födelsedag i mitten av November.. men nu när det snart är den dag jag gått och längtat efter har jag helt tappat allt som har med julen och göra!! Det får väl bli att baka lite gott julgodis och lyssna på julmusik idag då så att jag får tillbaka den härliga "christmas spirit" som jag har haft så länge!

Har i alla fall haft jullov i mer än en vecka nu vilket känns sjukt skönt. Alla uppgifter inlämnade och jag bara glider genom livet! Familjen och jag var och åkte skidor i Trysil från i Söndags till i Torsdags vilket var otroligt kul, det var så längesen.. Men man kan ju säga att jag och brädan inte var bästa vänner så jag har en del blåmärken, men som sagt- kul var det1 :) Ska verkligen ta tag i detta och vara mer aktiv på bloggen för jag tycker det är så kul!!

Glad tisdag på er alla!!
Min tisdag började med att jag gick upp klockan 6, åt en supergod frukost och cyklade till skolan. Började med att ha fysik och sedan matte men jag mådde såå dåligt så jag gick hem! Hatar när man är så förkyld att man inte ens kan tänka och det känns som om man har ett vattenfall i näsan...
Sitter nu i soffan och kollar på Person of Interest (Rekommenderar sjukt mycket asså) med en kopp te! Borde egentligen plugga inför mitt biologiprov imorgon, men just nu orkar jag inte!!

I'm definitely one of those people who prefers eating the gingerbread dough to the actual gingerbread cookies. That's why these cute little snowmans are the best things I've eaten in a long time, they taste just like gingerbread dough and I LOVE IT!!!!

Super simple snack with only a couple of ingrediens and you don't have to think about having to put them in the oven, you can eat them just as they are!

You need:

1 1/2 dl glutenfree oats / 1 1/2 dl glutenfria havregryn

1 dl almond flour / 1 dl mandelmjöl

2 tablespoons pumpkin seeds / 2 matskedar pumpakärnor

1 teaspoon coconut oil / 1 tesked kokosolja

1/2 dl water / 1/2 dl vatten

2 tablespoons chopped almonds / 2 matskedar hackade mandlar

10-12 medjool dates / 10-12 dadlar

1 1/2 teaspoon gingerbread spice / 1 1/2 tesked pepparkakskrydda

1 tablespoon almond butter (or any nut butter) / 1 matsked mandelsmör


1. Mix the dates in a food processor until they are like a paste.

2. Mix the rest of the ingredients together in a bowl with a fork and then add the date paste.

3. Mix together well with a fork until you're able to roll the mixture into balls. (You can add more water until the right consistency)

4. Roll the mixture into balls and roll them in different toppings, maybe some chopped almonds, shredded coconut or almond flour.

(You can mix all the ingredients in a foodprocessor too if you want but I like when there is whole pieces of nuts and pumkin seeds in them.)

1. Mixa dadlarna i en matberedare tills det är en jämn smet.

2. Blanda resten av ingredienserna i en skål och lägg tillsist till dadelsmeten.

3. Blanda samman väl med en gaffel tills du kan rulla smeten till bollar. (Tillsätt mer vatten om det behövs tills du får rätt konsistens.)

4. Rulla smeten till bollar som du kan rulla i olika toppings, som exempel hackade mandlar, riven kokos eller mandelmjöl.

(Du kan mixa all ingredienser i en matberedare tills du har en jämn smet också,, men jag gillar när man kan känna hela bitar av mandlar och pumpakärnor så att man får lite tuggmotstånd!)

Stop everything you're doing right now and make this: 3 INGREDIENT CHOCOLATE MOUSSE!!💗 It's healthy, it's chocolatey, it's super easy and most important: it's DELICIOUS!!!!

You only need:
250 ml coconut cream
4 tablespoons cacao powder
1/2 teaspoon vanilla powder
(1 tablespoon agave syrup if you want it a bit sweeter)

Just whisk everything together and put in the fridge for at least 1 hour and then ENJOY!!😻

This is my Saturday night snack today and it's soooo good topped with some rasberries!👌🏻 My tip to you is to get your butt off the couch and make this right now, you're going to thank me later!!😛

I am never eating regular pizza again, because this is so damn delicious. The "dough" has the same consistency as a regular pizza but it tastes even better. The sweetness from the potatoes makes this sooo good! You need to try it! It's gluten free, dairy free and you can make it vegan if you use a flax egg instead of a regular egg.


You need:

300 g sweet potato

2 tablespoons buckwheat flour

2 tablespoons almond flour

1 egg

1 teaspoon psyllium husk

1 teaspoon baking powder

Some oregano (optional but very delicious)

Toppings for the pizza (Put on all your favourites and make the best pizza ever)


1. Peel the potato and cut into small pieces. Boil until they are soft.

2. Mash the potato with a fork in a bowl and add the rest of the ingredients (except the toppings) and mix together well.

3. Spread the potato mixture on an ovenplate and stick some holes in it with a fork.

4. Put in the oven for about 25 minutes in 180 degrees celsius. (Or until the pizza is somewhat hard and has got a bit of colour)

5. Take the pizza out and put on all your toppings, and put it back in the oven.

6. Take the pizza out when your toppings look ready and ENJOY!!

This is a super simple yet incredibly delicious recipe for healthy cookie dough!! Why eat the unhealthy version when this one tastes just as good?😻
It's made out of beans and I had cacao nibs as "chocolate chips" but you can have real chocolate if you want it sweeter!💕

You need:
230 g (8 oz) rinsed black beans
A pinch of salt
1 teaspoon vanilla powder
1/2 dl cacao powder
1/3-1/2 cup pitted dates (soaked)
1/2 dl buckwheat flour
1/2 dl almond flour
Cacao nibs / chocolate chips

1. If you haven't got any soft dates, put them in a cup of water for a while.
2. Mix the beans in a food processor.
3. Add the rest of the ingredients and mix until even. (If your dough is dry you can add just a bit of the water that the dates were soaking in)
4. Add the cacao nibs or the chocolate chips and stir with a spoon. (You don't want to mix it in the food processor because you want them whole.)
And it's done🌟
So simple, healthy and tastes amazing!💕

Galettes are super easy to make, only a few ingredients and if you have a batch in the fridge you make them in just a few minutes!💕
They are gluten free, milk free and still delicious!
You fry them like a pancake and fold it in half and fill with what ever you want!!
I like to spread some almond butter inside and some fruit! But you can make them savoury and have avocado and tomatoes or something like that!
Or you can just eat them as they are, because they are delicious either way!

You need:
6 dl buckwheat flour
3 dl water
3 dl almond milk
1/2 teaspoon of salt
3 eggs
Coconut oil for frying

1. Whisk the flour and the eggs together in a bowl. Add the water and the salt and whisk. Then add the the milk and whisk until you have a even batter.

2. Let the batter set in the fridge for about 30 minutes or more.

3. Heat up a frying pan and spread some coconut oil on it.

4. Fry the batter (about 1/2 dl at a time) to round "pancakes shaped" galettes.

5. Fill them with what ever you want and enjoy!!

This has been one of my faves recently! It's so simple to make, only needs less than a minute in the microwave until it's finished and you can mix all the ingredients in the mug so you don't have to wash up all the tools after, which I love😻
It's a gluten free, dairy free (vegan) and refined sugar free mug cake that tastes like chocolate heaven!!😻

You need:
1/2 dl buckwheat flour
1/3 dl almond flour
1 egg
1/2 dl almond milk
A pinch of vanilla powder
1 tablespoon coconut sugar
2-3 tablespoons cacao powder (depending on how dark chocolate taste you want)
1/2 teaspoon baking powder
(You can use a bit of agave syrup too if you want it even sweeter)

1. Mix all the ingredients in a mug until it's even and has a clean texture! (If it's very dry consistency before you put it in the microwave, just add a bit more almond milk)
2. Microwave it for about 30-60 seconds depending on your microwave!
3. Top it with some fresh berries, a teaspoon of almond butter and some coconut milk! Or maybe some vegan ice cream that melts on the hot mug cake😻

So, I made another pink smoothie bowl, oops!!
Kind of obsessed with smoothie bowls made out of rasberries or strawberries, anything to make it pink. I am gonna get some more variation in my posts, but for now- here's the recipe for this beauty!! (And as you can see I LOVE much toppings on my smoothie bowls...)

🌱 1 avocado
🌱 1/2 cup frozen rasberries
🌱 1/2 cup almond milk
🌱 1 banana
🌱1 teaspoon of almond butter
🌱 1/2 teaspoon of lemon juice

Topped it with: banana, almonds, hemp seeds, rasberries, pumpkin seeds and a big teaspoon of the Barebells "protein hazelnut cream"- which is the BOMB!!!
