Summer is over and I can count the days we had good weather on one hand... But this summer has been all about the memories and what you make of the days, because then the weather doesn't matter that much!
My summer has been great despite the weather. And I truly hope yours has been great too!

Me and my friends were in Stockholm a couple of weeks ago and had the best time!! And the weather was so great there, we chose the right days for sure!! :)
The city was so beautiful, we saw so many amazing buildings, ate good food, walked a lot, shopped a lot and most importantly we laughed a lot!!

I went zip lining with some friends and was so scared, I thought I was going to die.. But I did it and it was so much fun!

I've picnicked on the beach while the sun was setting with my best friends!

Me and my friends had the house for ourselves a couple of days and we had a lot of BBQs while we listened to music and just talked. We went swimming in the pool, went out running, ate french fries on the beach and just lived life.

I have had so many good training sessions with my horse and we have evolved so much over the summer.

I'm going to remember summer 2017 as the summer I enjoyed a lot of friends and family time!
As the summer I enjoyed training, both myself and my horse.
As the summer I learnt a lot about myself and my loved ones!
As the summer I lived exactly how I wanted to!

Can we just talk about the perfection of this lunch? And wish you all could know how delicious it was!!😻😫
We ordered an Acerola bowl topped with banana, peanut butter, blueberries and hemp seeds and a blue spirulina bowl topped with rasberries, granola, shredded coconut, peanut butter and passion fruit!😻 Then also a falafel bowl which had the most amazing falafel ever in it, soo goooooood!!!! And it also contained pickled onion, carrot, oven roasted chickpeas and hummus and then we got a plate filled with sweet potato fries!!!! Can it get any better?💗
The place was called "Mahalo" and was such a cozy cafè in Stockholm, one of many beautiful places in Stockholm!💕

Had such a great time on our vacation there, loved the city so much and enjoyed every bit of it!😋
If you're there, I highly recommend this cafè, you won't regret it!! Everything was vegan and the pastries were all gluten free!!😻

Happy Sunday!!

Yesterday me and my family went to Halmstad in Sweden. We got there at about 10 and started shopping right away, because it's so much fun! :))

Then we were hungry so we looked around for a nice restaurant to eat at and according to me we found the best one!! Loved the interior and the food and the location and just everything!
It was situated just by the river and had so many beautiful tables with pastel colour splash on them! And the chairs were all in different bright colours! The menus were so cute, just look at all the pictures above! I loved everything with this restaurant.
The food was just amazing!! I ordered a "Summer bowl" which contained white quinoa with basil pesto, strawberries and halloumi! It was incredible!!!!

And then we started shopping again after refuelling with such amazing food!! The only thing that could have made the day better was the weather!! It rained ALL day, which sucked!! But it was a cozy day anyway! :)

Hello!

These last couple of days have been so sunny and amazing here in Sweden! And I have done so many fun things!
One of the best things that has happened is that I got to meet my friend who have lived in America for a year again!💕 I've missed her so much, and now I finally got to meet her again!
Me, my other friend and my sister made a surprise brunch for her and here are the results!
We made banana pancakes, Belgian waffles, cupcakes, strawberries in chocolate, bliss balls, smoothie and many other things (as you can see on the pictures).
We were so pleased with the results and everything was amazing!😍
Gonna post the recipes to some of the things later on, so you can get inspiration if you decide to make a brunch sometime too!
Anyways, hope you have had an amazing day! Remember to take care of your loved ones!

Hello!

Today's breakfast was my go-to breakfast that I just love!! It's so easy to make and you last so long!
It's usually a cinnamon & cardamom oatmeal (or cacao oatmeal), a glass of smoothie and a cup of tea (And I know, I am drinking tea from a chocolate mug).
And this is how it usually looks when I have no energy to make an instagram friendly breakfast! But thought I would share that side of me with you too.
This is not the best breakfast when it's hot outside, but those days I usually eat a smoothie bowl instead!

For the oatmeal I usually use:
1 dl gluten free oats
1.5-2 dl water
A pinch of salt
1/2 teaspoon cinnamon
1/3 teaspoon cardamom
(Or you can use 1 tablespoon cacao powder instead of the cinnamon and cardamom.)

Then just blend it all together and microwave it for about 1.5 minutes.
Top it with lots of fresh berries and some more cinnamon.

The type of smoothie I like to have depends very much on my mood. But most of the time it varies between rasberries/blueberries or spinach!
And then I use almond milk, maybe a banana, some chia seeds and some dates.
I usually just improvise after what I am craving!

Hejsan!!

Haft en supermysig dag i solen.
Började med en uteritt på ponnyn och därefter åkte jag, min syster och en kompis iväg och spelade minigolf. Hur fin är inte denna minigolf banan?😍 Jag kom tvåa (av tre Hahaha)...
Sedan tog jag en tupplur i en timme innan maten, vilket var välbehövligt. Därefter spelade vi volleyboll på stranden i solnedgången med några kompisar, och vädret var heeelt perfekt!!🎉
En sjukt bra dag, med bra väder!!👍🏻
Älskar sådana här sommardagar! Hoppas även ni har haft en mysig dag!

Hejsan allesammans!

Idag hade jag och min syster inget att göra så vi åkte till en Torekov, som ligger nära vår sommarstuga och fikade lite. Det var så mysigt!!
Älskar att bara gå runt i Torekov vid hamnen och njuta!
Jag tog en fruktsallad eftersom jag inte tål så mycket annat och min syster tog en chailatte och någon sorts bulle.
Annars har det inte hänt så mycket här, inte varit superbra väder så mest stannat inne, därför kändes det rätt att gå ut och fika.

Fikade på caféet som ligger på torget i Torekov och hittade en massa glutenfria saker där, vilket jag självklart blev superglad av! Köpte med mig ett laktos och glutenfritt ljust surdegsbröd hem som jag längtar efter att få testa! Uppdaterar er om vad jag tyckte om det när jag smakat.

Hello guys!

Hope y'all have had an awesome week so far! Mine has been great! The weather has actually been pretty okey here for the last couple of days so I've gotten a lot of stuff done!👍🏻
I just feel like I'm way more productive when the weather is nice!😂
Anyways, thought I would share this recipe that I made this week!🌸
It's these healthy brownies with banana!

You need:
1 large banana
5 dates
2 tablespoons almond flour
1 dl coconut flour
1/2 dl cacao
1 tablespoon peanut butter
1 tablespoon coconut oil
2 tablespoons coconut yoghurt (or you can use lactose free cottage cheese if you're not vegan)
1/2 dl dairy free chocolate chips (or just 20 g chopped dark chocolate)

1. Preheat the oven to 200 degrees celsius.
2. Mix all the ingredients, except the chocolate, together in a food processor.
3. Mix until it's an even mixture.
4. Add the chocolate.
5. Pour the mixture in to a baking tin.
6. Put the tin in the oven for about 15 minutes.
7. Let the brownies cool down and then cut it into squares.
8. Drizzle some peanut butter on top and enjoy!!

Hope you all had an amazing midsummer and better weather than I had!!😂
Sweden has this thing that it's always shitty weather on midsummer and I hate it!!😫
Anyway, made this smoothie bowl a couple of days ago, because I was craving something sweet and it was amazing! Are it with a bottle of lime water which fit perfectly to it!😍
For the smoothie bowl I used:
1/2 avocado
1/2 cup frozen rasberries
1/2 cup unsweetened almond milk
1 scoop protein powder
1/3 cup frozen mango
1 tablespoon chia seeds
4 pitted dates

And what I loved about this smoothie bowl was the spoon full of almond butter on top, it was such a good combination!!!💕

Hello guys!!

It was quite a while ago that I posted something here, but I have been more active on my instagram (@healthyinspirationfood).😋
My family have all got a cold and my friends too and I am not going to get sick, that's one thing that's for sure!!
So I made a ginger shot that is supposed to help build up my immune system and give me a lot of vitamin C and is also anti inflammatory! 🌟
And I just love how it burns your throat when you swallow it, it's like you can feel how it just gets rid of all the bad shit in your body!!😍
Anyway, thought I would share the recipe with you guys.

You need:
1 l water
200-300 g ginger
1/2 dl honey (or other sweetener)
2 lemons

How to do it:
1. Grate the ginger and put the grated ginger into the water.
2. Heat the water with the ginger to under 60 degrees Celsius for about 15-20 minutes. (If you heat it to over 60, all the good vitamins and health benefits with this drink disappears.)
3. Strain the ginger from the water and add the honey to the water.
4. Let it cool and then squeeze the lemons into the other ingredients.
5. Pour in to a bottle with lid and store in the fridge. You can store this drink up to a month in the fridge!
