This is a super simple yet incredibly delicious recipe for healthy cookie dough!! Why eat the unhealthy version when this one tastes just as good?😻
It's made out of beans and I had cacao nibs as "chocolate chips" but you can have real chocolate if you want it sweeter!💕

You need:
230 g (8 oz) rinsed black beans
A pinch of salt
1 teaspoon vanilla powder
1/2 dl cacao powder
1/3-1/2 cup pitted dates (soaked)
1/2 dl buckwheat flour
1/2 dl almond flour
Cacao nibs / chocolate chips

1. If you haven't got any soft dates, put them in a cup of water for a while.
2. Mix the beans in a food processor.
3. Add the rest of the ingredients and mix until even. (If your dough is dry you can add just a bit of the water that the dates were soaking in)
4. Add the cacao nibs or the chocolate chips and stir with a spoon. (You don't want to mix it in the food processor because you want them whole.)
And it's done🌟
So simple, healthy and tastes amazing!💕

Galettes are super easy to make, only a few ingredients and if you have a batch in the fridge you make them in just a few minutes!💕
They are gluten free, milk free and still delicious!
You fry them like a pancake and fold it in half and fill with what ever you want!!
I like to spread some almond butter inside and some fruit! But you can make them savoury and have avocado and tomatoes or something like that!
Or you can just eat them as they are, because they are delicious either way!

You need:
6 dl buckwheat flour
3 dl water
3 dl almond milk
1/2 teaspoon of salt
3 eggs
Coconut oil for frying

1. Whisk the flour and the eggs together in a bowl. Add the water and the salt and whisk. Then add the the milk and whisk until you have a even batter.

2. Let the batter set in the fridge for about 30 minutes or more.

3. Heat up a frying pan and spread some coconut oil on it.

4. Fry the batter (about 1/2 dl at a time) to round "pancakes shaped" galettes.

5. Fill them with what ever you want and enjoy!!

This has been one of my faves recently! It's so simple to make, only needs less than a minute in the microwave until it's finished and you can mix all the ingredients in the mug so you don't have to wash up all the tools after, which I love😻
It's a gluten free, dairy free (vegan) and refined sugar free mug cake that tastes like chocolate heaven!!😻

You need:
1/2 dl buckwheat flour
1/3 dl almond flour
1 egg
1/2 dl almond milk
A pinch of vanilla powder
1 tablespoon coconut sugar
2-3 tablespoons cacao powder (depending on how dark chocolate taste you want)
1/2 teaspoon baking powder
(You can use a bit of agave syrup too if you want it even sweeter)

1. Mix all the ingredients in a mug until it's even and has a clean texture! (If it's very dry consistency before you put it in the microwave, just add a bit more almond milk)
2. Microwave it for about 30-60 seconds depending on your microwave!
3. Top it with some fresh berries, a teaspoon of almond butter and some coconut milk! Or maybe some vegan ice cream that melts on the hot mug cake😻

So, I made another pink smoothie bowl, oops!!
Kind of obsessed with smoothie bowls made out of rasberries or strawberries, anything to make it pink. I am gonna get some more variation in my posts, but for now- here's the recipe for this beauty!! (And as you can see I LOVE much toppings on my smoothie bowls...)

🌱 1 avocado
🌱 1/2 cup frozen rasberries
🌱 1/2 cup almond milk
🌱 1 banana
🌱1 teaspoon of almond butter
🌱 1/2 teaspoon of lemon juice

Topped it with: banana, almonds, hemp seeds, rasberries, pumpkin seeds and a big teaspoon of the Barebells "protein hazelnut cream"- which is the BOMB!!!

Berry season is soon over, which I am so sad about!
But last weekend me and my family went to a rasberry farm where you could self-harvest rasberries! They were soooo big and yummy... so we came home with over 4 kg of rasberries, which made me a little happier!!💕

Sorry I haven't been active, it's just been much with the school start and everything, but now I am back!!

Summer is over and I can count the days we had good weather on one hand... But this summer has been all about the memories and what you make of the days, because then the weather doesn't matter that much!
My summer has been great despite the weather. And I truly hope yours has been great too!

Me and my friends were in Stockholm a couple of weeks ago and had the best time!! And the weather was so great there, we chose the right days for sure!! :)
The city was so beautiful, we saw so many amazing buildings, ate good food, walked a lot, shopped a lot and most importantly we laughed a lot!!

I went zip lining with some friends and was so scared, I thought I was going to die.. But I did it and it was so much fun!

I've picnicked on the beach while the sun was setting with my best friends!

Me and my friends had the house for ourselves a couple of days and we had a lot of BBQs while we listened to music and just talked. We went swimming in the pool, went out running, ate french fries on the beach and just lived life.

I have had so many good training sessions with my horse and we have evolved so much over the summer.

I'm going to remember summer 2017 as the summer I enjoyed a lot of friends and family time!
As the summer I enjoyed training, both myself and my horse.
As the summer I learnt a lot about myself and my loved ones!
As the summer I lived exactly how I wanted to!

Can we just talk about the perfection of this lunch? And wish you all could know how delicious it was!!😻😫
We ordered an Acerola bowl topped with banana, peanut butter, blueberries and hemp seeds and a blue spirulina bowl topped with rasberries, granola, shredded coconut, peanut butter and passion fruit!😻 Then also a falafel bowl which had the most amazing falafel ever in it, soo goooooood!!!! And it also contained pickled onion, carrot, oven roasted chickpeas and hummus and then we got a plate filled with sweet potato fries!!!! Can it get any better?💗
The place was called "Mahalo" and was such a cozy cafè in Stockholm, one of many beautiful places in Stockholm!💕

Had such a great time on our vacation there, loved the city so much and enjoyed every bit of it!😋
If you're there, I highly recommend this cafè, you won't regret it!! Everything was vegan and the pastries were all gluten free!!😻

Happy Sunday!!

Yesterday me and my family went to Halmstad in Sweden. We got there at about 10 and started shopping right away, because it's so much fun! :))

Then we were hungry so we looked around for a nice restaurant to eat at and according to me we found the best one!! Loved the interior and the food and the location and just everything!
It was situated just by the river and had so many beautiful tables with pastel colour splash on them! And the chairs were all in different bright colours! The menus were so cute, just look at all the pictures above! I loved everything with this restaurant.
The food was just amazing!! I ordered a "Summer bowl" which contained white quinoa with basil pesto, strawberries and halloumi! It was incredible!!!!

And then we started shopping again after refuelling with such amazing food!! The only thing that could have made the day better was the weather!! It rained ALL day, which sucked!! But it was a cozy day anyway! :)

Hello!

These last couple of days have been so sunny and amazing here in Sweden! And I have done so many fun things!
One of the best things that has happened is that I got to meet my friend who have lived in America for a year again!💕 I've missed her so much, and now I finally got to meet her again!
Me, my other friend and my sister made a surprise brunch for her and here are the results!
We made banana pancakes, Belgian waffles, cupcakes, strawberries in chocolate, bliss balls, smoothie and many other things (as you can see on the pictures).
We were so pleased with the results and everything was amazing!😍
Gonna post the recipes to some of the things later on, so you can get inspiration if you decide to make a brunch sometime too!
Anyways, hope you have had an amazing day! Remember to take care of your loved ones!

Hello!

Today's breakfast was my go-to breakfast that I just love!! It's so easy to make and you last so long!
It's usually a cinnamon & cardamom oatmeal (or cacao oatmeal), a glass of smoothie and a cup of tea (And I know, I am drinking tea from a chocolate mug).
And this is how it usually looks when I have no energy to make an instagram friendly breakfast! But thought I would share that side of me with you too.
This is not the best breakfast when it's hot outside, but those days I usually eat a smoothie bowl instead!

For the oatmeal I usually use:
1 dl gluten free oats
1.5-2 dl water
A pinch of salt
1/2 teaspoon cinnamon
1/3 teaspoon cardamom
(Or you can use 1 tablespoon cacao powder instead of the cinnamon and cardamom.)

Then just blend it all together and microwave it for about 1.5 minutes.
Top it with lots of fresh berries and some more cinnamon.

The type of smoothie I like to have depends very much on my mood. But most of the time it varies between rasberries/blueberries or spinach!
And then I use almond milk, maybe a banana, some chia seeds and some dates.
I usually just improvise after what I am craving!
