The main reasion why I love to make muffins are that they are easy and fast to make, and on top of that super delicious, The muffin below consist of 2 different doughts and 2 different kind of chocolate. It's combination is just to good to be true.


150g butter melted

2dl sugar


3 dl flour

1 teaspoon vanilla sugar

1 teaspoon baking powder

1/2 dl milk

3 teaspoon natural oil

2 tablespoon cacao

Dark chocolate

White chocolate


1. Mix sugar and butter in a bowl.

2. Stir in the eggs one at a time.

3. Add flour, vanilla sugar and baking powder.

4. Give the muffin a soft consistence by adding and natural oil.

5. Divide the dough into two bowls.

6. Add cacao to one of the bowls

7. Chop dark and white chocolate.

8. Add the dark chocolate to the white dough and the white chocolate to the dark dough.

9. Prepare a muffin pan. Add one spoon of dark dough and one spoon of white dough to each muffin form.

10. Bake in the oven for 15-20 minutes in 175°C.

It is October and the threes have started to change clours. In this post I would like to share my October favorites.

My absolutely best october muffin is the Mini Apple Pie in muffin forms. It does not only look cute, but also taste delicious. WARNING FOR SWEETNESS!

Another favorite of mine is the Apple Cake. This cake combines very well to the afternoon tea.

A saviour if you forgot or had no time to bake for the afternoon is this 3 minutes Apple Pie In A Cup cake.

This Pumpkin Bread is one of the best breads that I have ever eaten. It is sweet and soft with a cruncy edge.

My absolutely favorite is this Pumpkin Soup made from pumpkin, potatoes and chili. This soup is very sweet and tastes very good with pumpkin bread.



5 minutes bakeries

This very sweet Apple cake can be made in less then 3 minutes... you do not believe me? Then try it yourself!


1 dl flour

0.5 teaspoon baking soda

0.75 dl rolled oates

I0.25 dl brown sugar

0.5dl + 1 teaspoon sugar.

1/2 Apple

1 teaspoon cinnamon

1 egg

2 tablespoon milk



1. Peel and cut 1/2 apple into small pieces.

2. Put apple pieces in a bowl and mix with 1/2 teaspoon cinnamon and 1 teaspoon sugar.

3. Mix flour, baking soda, oates, brown sugar, sugar and cinnom in a cup.

4. Add egg and milk.

5. Add 2/3 apple pices and mix well until well distributed. Place the other 1/3 apple pieces on the top.

6. Microwave for 2-3 minutes.

7. Pour syrup on top.

​OPS: This is a very big portion (2-3 p) I would recomed to at least take half of each ingredient if you mamke a cake for yourself only! :)



Cupcake & Muffins


150 g butter

150g sugar

50g brown sugar

1 egg

250g flour


250g almond paste

2 large apples

50g brown sugar

2 eggs



1. In a large bowl beat butter 1 min on medium speed until smooth and creamy.

2. Add sugar and egg.

3. Add flour.

4. Roll out the dough on the baking table, and cut out big round circles.

5. Press the circles into a muffin pan.


6. Peal apples and cut into small small pieces.

7. Beat almond paste and egg until fluffy.

8. Add the apple pieces to the mixture.

9. Add the filling into the crust

10. Optional: make a grid pattern.

Bake in the oven at 175° , for 20 min.



Cake, Bread

When it comes to apple cakes my mind goes back to my childhood when my mom used to prepare an amazing apple cake: Appsoft, high and beautiful golden.

Apple cake it truly one of my favorite cakes. It gives you the fresh taste of apples!


1-2 apples

3 table spoon sugar

1 teaspoon cinnamon

100g butter

1dl sugar

1 tablespoon brown sugar

4 eggs

1 tablespoon vegetable oil

1 tablespoon milk

250g wheat flour


1. In a large bowl, combine apples, sugar and cinnamon. Let stand for half an hour.

2. In another bowl, cream butter ans sugar. Add eggs one at a time, beating well after each addition. Add vegetable oil and milk.

3. Slowly add wheat for little by little.

4. Transfer into a loaf pan. Push apple slices into batter, placing them closely together.

5. Bake at 175°C for 35 minutes.




Banana bread is an old time favorite that often is made by over riped bananas. Tips of how to ripe your bananas in 10 minutes KLICK HERE

Now that your bananas are ready and raring to go, grab your favorite berries.... Banana bread is the best start in the morning. Best of all, there is an optional sugar topping so we can now offically ditch the coffee shop sweets in favour of this DIY alternative.


400g wheat flour

2,5 tablespoon brown sugar

1 teaspoon baking soda

a pinch of salt

3 very riped bananas

50g melted butter

0,5 dl milk

1 tablespoon vegetable oil

3 eggs

1-2 dried fruits and berries

Optional: sanding sugar for topping


1. In a bowl combine together flour, sugar, baking soda and salt.

2. In a seperate bowl stir together mashed bananas, milk, butter, eggs and vegetable oil.

3.Combine to one batter.

4. Distribute the batter evenly in a loafpPut the batter in a loaf pan.

5. Optioinal: sprinkle the top of the batter with a generous amount of sanding sugar.

Bake the bread in the oven for 50-55 minutes in 175°C.



Tips & Tricks

Cooking a banana will make it moist sweet and brown. This is perfect for banana bread and other good bakeries, and not too bad if you want the banana right away.


1. Fire up your owen to 150°C.

2. Place the bananas on a lined baking sheet.

3. Bake in the oven for 10-20 min,

Now you are ready to go! Add your bananas to your reciepe, and enjoy!



Cupcake & Muffins
These mini Oreo cheese cakes are not only cute but also delicous!

12 oreo cookies

200g cream cheese

0,5dl sugar

1 egg

1. Place one Oreo in each muffin form. The Oreo will be the crust of the cheesecake.

2. Combine cream cheese, sugar and egg.

3. Divide the mixter evenly into the muffin form over the oreo.

Bake in the oven for 20-25 minutes at 175°C.

Let the cheesecake cool down in the fridge for 48hours to get the best flavour.




This layer cake is great fun- bright green and full of custard, jam, marzipan, and a mound of whipped cream

​You can easily make your own marzipan roses from modelling marzipan. If you can't find coloured marzipan, you can colour it with icing colour :)



4 eggs

2dl sugar

1dl wheat flour

2 teaspoon baking powder

1dl potato starch


3dl Marsan (custard sauce)

4dl whipping cream

1dl strawberry jam

.Cover with marzipan, and decorate with marzipan roses and icing sugar.


1. Whip egg and sugar until fluffy.

2. Add flour, baking powder and potato starch. Mix well.

3. Pour the batter in a cake form, with a diameter of 24 cm.

3. Bake in the oven for 30-40 minutes at 175°C.

4. Split the cake carefully into 2 pieces.

5. Wipping cream combined with leftover Marsan.

6. Marzipan cover
