1 dl havregryn
2 dl mjölk
1/5 tsk kanel
1 tsk honung
En nypa salt

Blanda alla ingredienserna i en kastrull och koka upp. Låt gröten koka tills den nått önskad konsistens. servera som den är eller med en skvätt mjölk.

This is a simple cheesecake that will not take you forever to make. Its nice and rich and is guaranteed to fulfill your cheesecake cravings.

You´ll need:

Crust
12 graham crackers
50 grams butter
2 tbsp granulated sugar

Filling
400 grams cream cheese
1 dl full fat cream
1 1/2 dl granulated sugar
1/2 tsp vanilla extract
1 tsp vanilla sugar

First and foremost you should bring the cream cheese to room temperature and pre heat the oven to 170°c.

Start with the crust. Add the graham crackers to a zip lock bag and crush with a rolling pin until it turns into crumbs (if you have a food processor, you can of course use it to crush the biscuits instead). Melt the butter and combine with the sugar and crackers until it becomes a texture that resembles wet sand. If its's to dry just add some more melted butter.

Take a round cake tin with a removable bottom and grease it with butter. To help with serving of the cake when done, it is good to add a baking sheet on the bottom as well. Put the mixture in your cake pan and press down until it becomes a thin layer at the bottom, but also push up on the edges.

Bake in the crust in the middle of your pre heated oven for about 8 minutes or until golden.

While the crust is in the oven, you can start with the filling. Mix all ingredients, except the cream, in a bowl. Whisk until smooth and fluffy. Beat the cream in another bowl until it forms stiff peaks. Then fold the cream into the cheese mixture and gently mix to not remove too much air.

When the crust is ready, you can set it in the fridge or freezer and let it stand until it has cooled completely. When the bottom has completely cooled down, you can pour in the filling and smooth out the top.

Now your cheesecake is basically done. The only thing that's left is to put the cake in the refrigerator (or freezer if you are in a hurry) and wait until it becomes solid.

So this is one of my favorite go-to dishes when I want to feel good about what I'm eating. It's healthy, easy and most importantly of all yummy. Since this is such an easy dish I don't really know if I should call this a recipe but I wanted to share it with you anyway.

serves 2
You'll need:

2 chicken breasts (3 if they are small)
2 small sweet potatoes
salt
pepper
and your favorite seasonings

Sauce

2 dl of creme fraiche
1 garlic clove
1 tsp of parsley (dry or fresh)
a pinch of salt and pepper to taste

Start by boiling the potatoes since they take the longest. Just boil on medium high for 20 - 40 minutes depending on the size of the potatoes. If I get my hands on two small potatoes I usually just boil them whole, with the skin on, and just serve them as they are splitting them down the middle since you don´t want to be eating the skin. If I only find large potatoes i just buy one and boil it. When its done i put the in ice cold water right away and the skin will just slide of. after that I put the potato in a bowl, mash it up, season with some salt and pepper and serve.

The chicken is also really easy. Start adding the chicken and the desired seasoning(I use salt, pepper, garlic powder and paprika powder) to a pan and brown on high heat on each side until golden. When the chicken is golden turn down the heat to medium and cook for about 6 minutes on each side or until fully cooked.

So for the sauce you just want to mince the garlic and add all of the ingredients to a bowl. Mix until fully combined and let it set in the fridge for about 10 -15 minutes.

Tip!
If you want fresh herbs but can't be bothered with growing a forest in your house you can always check in the frozen isle in a well sorted supermarket and you will usually find fresh herbs that have been chopped up and frozen so you can just have it in your freezer and sprinkle on to your food.

Here is an easy everyday recipe. If I'm in a hurry or if I've just had a long day and don't want to spend the whole evening in the kitchen, I love to make a easy pasta.

4 servings
You'll need:

Sauce
8 mushrooms
1/2 head of broccoli
1/2 onion
1 large clove of garlic
2 dl cooking cream
1 tsp soy sauce
1/2 vegetable stock cube
a pinch of dryed thyme
a splash of pasta water
salt and pepper to taste

Pasta
1 1/2 l water
1 tsbp olive oil
salt
about 300 gr pasta

Boil the pasta according to the directions on the package. Don't forget to save some pasta water before you drain the pasta. Now finely chop the onion and garlic, slice the mushrooms and cut the broccoli into bite size pieces. Saute the onion and then add the garlic, mushrooms, broccoli and thyme. Fry for a couple of minutes and then add the cream. Add the salt, pepper, soy and stock. Let the sauce simmer until it thickens.

Taste the sauce right before you combine it with the pasta and make sure it's well seasoned since the pasta takes away alot of flavour. Add the pasta an mix until fully combined. If you like parmegiano reggiano (or grana padano) cheese you can grate it over the pasta to add some flavour if the sauce is a bit under seasoned or if you're just a cheese lover like me.

Banana bread is something that my mother used to bake when I was little as it's very common in Iceland. I actually don't even like bananas but this bread is to die for. It's best fresh out of the oven, sliced with butter on top. The saltiness from the melting butter combined with the sweat cake is heavenly. If you're not a butter freak you can eat it plain and it's (almost) just as good.

You'll need:

2 big ripe bananas
50 grams butter, melted
2 eggs
2 dl sugar
3 dl flour
1/2 dl milk
2 tsp baking soda
2 tsp vanilla sugar
1 tsp cinnamon

Preheat oven to 170°c.

​Whisk the sugar and and eggs together until they become light in color. Melt the butter and take of the heat, then add the milk to the butter. Mix all of the dry ingredients in another bowl. Add the dry ingredients to the egg mixture an mix well. Now add the butter and the bananas to the dough. Mix until fully combined and then transfer the dough to a greased non-stick bread pan and bake in the middle of the oven for about 40 - 50 minutes or until an inserted toothpick comes out clean.

Sometimes you just need a quick boost! This is a simple smoothie that's really delicious. And to make it even better for you I put in some chia- and flax seeds. Yum!

1 serving
You'll need:

1 1/2 dl vanilla yogurt
1 1/2 dl tropical juice
6 frozen strawberries
1 tsp flax seeds
1 tsp chia seeds

Put all the ingredients into a blender and mix until smooth. If you think the smoothie is to thick you can always just add some water and mix it together until you get the perfect consistency.

One of my all time favorites is of course a well made lasagna. I, originally enough, love my mothers lasagna and rarely order a lasagna if I go to a restaurant because I always end up being disappointed. This recipe is not exactly the way my mom does it, especially not nowadays since she is a vegetarian, but it´s close enough. This dish is perfect if you are having friends or family over or if you want leftovers for work or school. It's as good, if not better, the next day.

serves 4-6
You'll need:

Bechamel sauce
50 grams butter
3 tbsp flour
5 dl milk
2 dl grated aged cheese
salt and pepper to taste

Meat sauce
500 grams of minced meat, I use 50% beef and 50% pork
1 tsp sugar
1 meat stock cube
1/2 dl of red wine
1 tbsp soy sauce
2 bay leaves
1 tsp dried basil
1 tbsp dried oregano
1/2 dl finely chopped onion
2 cloves garlic
1 tbsp tomato paste
1 can crushed tomatoes
1 carrot
salt and pepper to taste

Other
About 6 lasagna sheets, depending on the size of your baking dish
2 dl grated cheese

Preheat the oven to 200°c.

Start making the meat sauce. First off all you need to finely chop the onion and garlic. Brown the onion and garlic together with the minced meat. Now add the crushed tomatoes, tomato paste, basil, oregano, salt, pepper, broth, sugar and wine. When that is well mixed throw in your bay leaves. Coarsely chop the carrots and add them as well. Let the sauce simmer over medium heat, stirring occasionally, until it is time to "build" the lasagna.

Now for the bechamel sauce. Melt the butter in a saucepan over medium heat. When the butter has melted, stir down the flour until it is completely blended with the butter.Add milk, one deciliter at a time, and stir well. Bring to a boil over low heat whilst stirring so it doesn't burn. Cook the sauce for about 10 minutes, or until the taste of flour has disappeared. Now remove the pan from the heat and stir in the cheese.

When your sauces are ready it's time to assemble the lasagna. Get an deep baking dish and start with adding a thin layer of bechamel sauce in the bottom of the form and then a single layer of the lasagna sheets. It's very important that the pasta sheets don't lie on top of each other because if the do you will end up with raw pasta in your lasagna. When the sheets are in place, add a layer of meat sauce. On the meat sauce, add a layer of bechamel sauce, then a layer of pasta. Continue in this manner until the sauces are finished. The top layer should always consist of just meat- and bechamel sauce. Sprinkle grated cheese on top and put the lasagna in the middle of the oven for about 20 minutes, or until the pasta is cooked. Serve with a fresh salad and garlic bread.

So sometimes you want something savory for breakfast but don´t want to spend all the time making a big meal and that´s when you make a mug cake. This one is my take one a french toast mug cake.

serves 2
You'll need:

3 slices of white bread
1 egg
2/3 dl milk
1 tsp cinnamon
1 tbsp sugar1 tbsp flour

2 tbsp jam
a pinch of salt
butter to grease the mugs

Start by cutting the crust of the slices of bread and then cut the slices into cubes. Mix all the ingredients, except for the jam, in a bowl.

Grab two microwave safe mugs and layer the jam with the bread cubes. Pour over the egg and milk mixture and pop them in the microwave on high for about 1.5 - 2 minutes, one at a time. Make sure to keep a close eye whiles in the microwave since every microwave is different.

Take out, let cool and if you wanna be all fancy you can dust it with some powdered suger and pour some maple syrup on before serving.

Inspo, Window shopper

Everyone that loves to cook should own a cast iron pot. I love to window shop and hope to one day have a home that has a huge kitchen so I can buy one of everything kitchen related! And tho they might be a bit expansive, they just get better and better the more you use them so if you find a good one it should last almost all your life.
