Sorry for the lack of updates, but there has been a lot going on so I didn't have the time to sit down and write anything.
But today I figured I could give you my recipe on broccoli soup! Made it today for dinner. 😍


Recipe:

1 kg frozen broccoli
~10 potatoes
1 onion
2 dl sourcream ( cremé fraiche )
14 dl water
2 chicken buljon & 1 vegetable
3 slices of cheddar
Salt, blackpepper and garlicpowder

Start by boil up the broccoli, while you wait you cut the potatoes in to even cubes.
Put them in and then cut the onion in to small pieces. In with the buljon.
Let is boil for a while, in with the spices and taste. 🌸
When everything is soft, take the pot of the heat. Mix it with a hand blender.
In with the sourcream and rip the cheese in to smaller pieces and mix it. Taste and then let it sit for about 5 minutes before serving. 🌺

Around lunchtime today Emily and I started baking some gluten free bread, since she is allergic. 😊
Luckily we went grocery shopping yesterday so we had everything prepared. ^-^
She thought the bread was delicious, which was a relief since this is my second time baking bread and first time I made gluten free. 😁🌺

Recipe: --> Start by heating your oven to 250° C

* 12 dl of gluten free flour, I used Lailas Mjölmix.. Which is a Swedish brand.
* 50 g butter
* 5 dl water or milk ( I used water since we were out of milk)
* 50 g yeast for bread
* 1,5 - 2 teaspoons salt
* 1,5 - 2 tablespoons sugar
* Eggs or butter to coat them with before you put them in the oven.

Start by melting the butter and stir in either milk or water and check so it's 37°C.
Break the yeast in to small pieces in a bowl and put the lukewarm fluid over and stir until completely mixed in.
Mix in the salt, sugar and flour.. I took a bit of flour at the time so it really got mixed in. 💗
"Work with the dough" until it doesn't stick to the edges of the bowl. 😊
Put a thin towel or a thinner pillowcase like I did over and let it rise for 30 minutes.

Take the dough out on your counter that you have a bit of flour spread out on, also make sure your hands have some on as well. 😉 It makes it easier to work it again. ^-^
Roll it to a long "sausage" and cut even balls, we got 20 since I made a smaller size. ✨
Roll them to buns and pat them until they are like 1 cm thick and put on a baking plate with some non stick paper, cover them in plastic foil. ^^ Let them rise for another 30 minutes. 😁

While you wait you can mix up 1 egg and coat them when they are done rising. 🌻
I took a bit too little egg, but they still turned out great. But after you've done that, put them in the middle of the oven for 8-10 minutes. 😍

Hahaha! I didn't find any of the towels that I usually use so I took this "gorgeous" pillowcase! xD

Today's dinner, minced moose meat with pasta and of course parmesan!
This is one of my favorite dishes to eat. ^^

Some ground moose meat, don't exactly know how much I had, would think that it is about 600g.
1 mid sized yellow onion
1 mid sized red bellpepper
2 packages with crushed tomatoes - garlic
1 can of corn
1 can of mushrooms
Some bbq sauce
Parmesan
Ketchup
Some cream
Season with salt, lemonpepper, garlic powder, BBQ spice, chili and garlic bits.

Hiya everyone!

Rob marinated some porkchops, oh lord have mercy! He always makes the meat perfect, it was soooo delicious!
Have a total food coma at the moment, so I'm just relaxing and talking with some friends on teamspeak. ^^
Been working on an achievement all day, for the artifact fishing pole.. xD
I hate fishing in game so much right now, hahahaha! I have 6 more fishes to catch before I'm done. 😳
I really hope that I will complete it today, but right now I'm not really sure. 😂 Maybe I'll take a little break from fishing and do something else for a while and it will be better. ^^

But this dinner though.. Drooling just by thinking of it. 😍 so happy I got a man that can cook awesome food. 😘

I have loads of recipes in notebooks and saved in bookmarks on my computer. 😃
This is one I found years ago, but I've never got to the point of actually trying it yet. Haha!
It sounds super easy and delicious, what you guys think?
If you are unsure about how much a cup is use this link . ^^

Ingredients:

  • 1 large loaf or boule-style Italian bread (Sourdough or French could also work)
  • ½ cup butter (unsalted or salted is fine), melted
  • 1 clove garlic, minced
  • 1 bunch scallions, trimmed and thinly sliced
  • 8 ounces sharp Cheddar cheese, shredded (about 2 cups)
  • 8 ounces Monterey Jack cheese, shredded (about 2 cups)
  • Chopped fresh parsley, to garnish (optional)

Directions:

  1. Preheat oven to 350 degrees F. Spray a sheet of heavy-duty foil with non-stick cooking spray and set aside.
  2. Cut a cross-hatch pattern into the top of the bread by slicing ½-inch grid lines into the bread, stopping about ¼-inch from the bottom of the bread so that it stays together. Place the bread on the piece of foil that has been sprayed.
  3. Stir together the melted butter, garlic and scallions.
  4. Gently separate the bread with your fingers, then spoon the butter mixture in all of the seams, making sure it is evenly distributed among the whole loaf. Wrap the loaf up in the foil and place on a baking stone or directly on the oven rack and bake for 10 minutes.
  5. Remove from the oven and increase the oven temperature to 425 degrees F.
  6. Open the foil and sprinkle the shredded cheese on top of the bread. There will be a lot of cheese, so try to push down as much as you can in between all of the crevices in the bread. Leave the foil open and return it to the oven. Bake until the cheese is completely melted, bubbling and starting to brown on top, about 15 minutes. Let stand for 5 minutes before serving, then sprinkle with parsley (if desired) and dig in!

I just made some egg salad, I didn't have everything I usually use but almost! (≧ω≦)
It's something that is VERY nice to have on a sandwich. ❤
More filling for your stomach if you want something light for lunch/dinner or just as a little night sandwich. ^-^

So what do I use to make this delicious egg salad? It's so simple it's ridiculous! 😄
Which makes it even more awesome! 😍❤

You will need!
(Depending on how much you want to make)

8 hard boiled eggs
4 tablespoons of Hellman's Mayo
2-3 teaspoons of Dijon mustard (mix in and taste if you think it need less or more is up to you!)
Chives depending on how you prefer
Salt, black pepper and garlic powder after taste

Cut the eggs in smaller pieces, I like them to be little bigger so it's not just a big mush of everything.
Put them in a bowl, put the mayo in and mix everything. After that you mix in the mustard, you can taste to see if
you need more of either mustard or mayo. Cut the chives in to small pieces and mix in with the spices.
Taste and put on a slice of bread and one on top and you are good to go! 😍❤
