WOW! I was shocked with the outcome of this recipe. The chia-and-water egg trick is so cool and honestly blew my mind. Nevertheless, the waffles tasted amazing and you can top them with whatever you like.

INGREDIENTS: (6 portions)

100 g. oats
1 tbsp. chia seeds + 3 tbsp. water
½ tsp. cinnamon
½ tsp. baking powder
200 ml. almond milk

INSTRUCTIONS:

1. Prepare the chia-and-water egg by combining the two ingredients and letting it set for 20 minutes.
2. Make the oat flour by blending the oats.
3. Add the almond milk, the baking powder, the oat flour, the cinnamon and the chia-and-water egg into a bowl and mix well.
4. Pour the mixture into a waffle maker and let it cook for about 5 minutes or until the edges are crispy and the waffle maker opens easily.

Poké bowls (not to be confused with Pokémon!) has been very popular in Sweden, at least, for the last couple of years and is a Hawaii rice dish. In this recipe I will show you what ingredients I topped my rice with, but you can add whatever you like.

INGREDIENTS: (1 portion)

1/2 chicken breast (teriyaki chicken)
1 /2 avocado
7 leaves of parsley
Handful of pumpkin seeds
1/4 mango
60 g. rice

INSTRUCTIONS:

1. Boil the rice and top with all of the ingredients (I also made a tofu poké bowl and it tasted great!.

This is a great snack or lunch, packed with goodness, if you want something different. It is super fresh and tastes like summer!

INGREDIENTS: (1 portion)

1/2 chicken breast
1 avocado
Handful of parsley
1 garlic clove
Salt
Pepper
Chilli
Bread

INSTRUCTIONS:

1. Boil the chicken all the way through and mash it with forks.
2. In a blender, add the avocado, the parsley, the garlic and the seasoning.
3. Mix the ingredients together and add the chicken to the paste.
4. Lay the mixture in-between two slices of bread.

This paleo cake is loaded with protein! By combining ingredients such as eggs, almond flour and coconut oil this recipe will taste far better than any other dense "protein bread" as it is a cake!

INGREDIENTS: (approx. 12 rectangles)

Handful of blueberries
3 eggs
2 tbsp. lemon juice
4 tbsp. agave sirup
Pinch of salt
120 g. almond flour
4 tbsp. ground coconut
1 tsp. baking powder
40 g. coconut oil

INSTRUCTIONS:

1. Pre-heat the oven to 170°C.
2. Combine the almond flour, the ground coconut, the baking powder and the salt in a bowl.
3. Whisk together the eggs, the lemon juice, the agave sirup and the coconut oil.
4. Add the wet ingredients to the dry ingredients.
5. Separate the mixture to two bowl and add the blueberries into one of them.
6. Prepare a loaf pan and aline it with parchment paper.
7. Pour the mixture with the blueberries in first, followed by the mixture without.
8. Bake for 15 minutes or until a toothpick comes out clean.

I am not too sure how real chocolate truffles tastes like, but if I was served these I would believe that these were the real deal.

INGREDIENTS: (approx. 12 rectangles)

1 avocado
60 g. dark chocolate
2 tbsp. cocoa powder
1 tbsp. vanilla extract
Pinch of salt
4 tbsp. ground coconut

INSTRUCTIONS:

1. Mix all of the ingredients in to a fine mixture in a bowl with a hand blender.
2. Let the mixture rest in the refrigerator for about 1 hour.
3. Shape the mixture into rectangular pieces and sprinkle coconut flakes on top.

I present you these, Swedish semlor, to celebrate the very made-up holiday Fettisdagen. The semla is a very well-known Swedish pastry and is so delicious and will definitely give you a food coma.

INGREDIENTS:

BREAD:

25 g. yeast
50 g. butter
150 ml. milk
2 eggs
Pinch of salt
1 tsp. cardamom
30 g. sugar
250 g. flour

ALMOND SPREAD:

60 g. almond
30 g. sugar
5 tbsp. heavy cream

INSTRUCTIONS:

1. Pour some hot water into a bowl and let the yeast dissolve into it.
2. Melt the butter and the milk to it while staring.
3. Pour the butter and milk mixture into the water and yeast bowl.
4. Add the sugar, the salt, the cardamum and 1 egg as well and stir.
5. Add the flour gradually (by hand or with the help of a processor).
6. Let the dough rise for 30 minutes.
7. After the 30 minutes, bake out the dough and divide it into equal parts.
8. Let these rise for another 30 minutes.
9. Whack up the other egg and brush it on the buns.
10. Let the buns bake in the oven for 8-10 minutes on 225°C.
11. Cut the buns 2/3 of the way up and scoop out the insides (leaving space around the edges so it does not fall apart).
12. Mix the almond in a processor and combine it with the sugar.
13. Add the mixture to a bowl and combine it with the scooped out bread and the heavy cream.
14. Fill the inside of the buns with the mixture.
15. Whip up some whipped cream and lay it in the middle of the buns.
16. Sprinkle some icing sugar on top.

This is the third recipe in my "balls" series (haha!). These tastes so unique and the colour is so amazing. So fresh and delicious to eat.

INGREDIENTS: (approx. 12 balls)

1 tsp. lemon zest
8 dates
Handful of blueberries
50 g. cashew nuts
2 tbsp. lemon juice
20 g. ground coconut

INSTRUCTIONS:

1. Add the cashew nuts and the ground coconut into a processor and mix until they become a coarse meal (like a powder).
2. Add the rest of the ingredients and process until the mixture is mouldable (add some water if the mixture is too dry).
3. Form the mixture into small balls.
4. Roll the balls in whatever you like.

This is probably the healthiest smoothie ever, as all green smoothies claim to be. That being said, you can literally feel your body getting healthier with each sip of this smoothie.

INGREDIENTS: (1 portion)

1 handful of kale
1/2 mango
100 ml. water
1 kiwi
1 tbsp. green yogurt.

INSTRUCTIONS:

1. Mix all of the ingredients together in a blender (serve it with whatever you like!).

This is the best starter in the whole world. It is so creamy but yet so fresh and tastes great. Especially together with the sourness from the lemon and the chewiness from the shrimp. A stale piece of bread goes great with this as well.

INGREDIENTS: (6 potions)

3 avocados
18 shrimps
1 lemon
3 tbsp. mayonnaise
4 tbsp. creme fresh 
1 tsp. dill
1 tsp. parsley
Pepper
Salt

INSTRUCTIONS:

1. Prepare the shrimp.
2. Scoop out and cut up the avocado from its peel (but save the peel!).
3. Mix all of the remaining ingredients together.
4. Fill the avocado peels with the mixture and top them with a shrimp and a slice of lemon.

This recipe is all about patience. Having to wait for whatever you are anticipating in the freezer is probably the mot frustrating thing in the world. Other than that, there is nothing to it really. A super easy and quick todo-part.

INGREDIENTS:

STRAWBERRY FROZEN YOGURT: (2 popsicles)

2 tbsp. greek yogurt
1 tbsp. agave sirup
4 strawberries

STRAWBERRY FROZEN YOGURT: (2 popsicles)

Handful of mixed berries

INSTRUCTIONS:

1. Mix all of the ingredients for each popsicle type in separate bowls.
2. Pour the mixtures into moulds.
3. Freeze for about 2 hours.
